Do you have any descriptive food words that make your mouth water? For me, if I see the words “birthday cake” or “cake batter” I have kind of a drooling, mouth watering response. I don’t know what it is about those words, but for me, when I see them, I have to have whatever it is immediately. So, when I started seeing recipes for chia puddings that were described this way, I was all in. I have to give a big thank you to Macy at Paleo Crumbs because her awesome recipe was the one that made me run to the store to buy the ingredients and make this birthday cake chia pudding.

I don’t know what mornings are like in your house, but here in my house we are kind of laid back. It wasn’t always that way. We used to run around, grab whatever we could to eat, shower, dress, and leave as quickly as possible to begin our day. It was that way for many years. Then we moved to the city. And this part of our lives magically slowed down. Now, we are able to get up, go to the park with the dogs, have an actual real conversation, and spend time together before anyone has to leave. So, oftentimes I will cook a big breakfast for us. This birthday cake chia pudding, is so good, that it can even compete with a great avocado toast or delicious eggy type breakfast, but there’s absolutely no cooking involved. The only labor here comes when you have to shake the jar!

I’ve always been a fan of chia pudding. I like that rice pudding-like texture. I love that I can customize it with whatever flavor I’m feeling at that particular moment. I also love that it is so easy to make and that it can be made way in advance. Yes, chia pudding is an awesome invention.

Now, if I’m being totally honest, I’ll tell you that I love chia pudding, but my family is not quite as enamored with these yummy jars as I am. BUT, this birthday cake chia pudding has changed all that. As soon as I stuck a spoonful in Steve’s mouth, he was a convert. It’s really that good. And, it really is reminiscent of vanilla birthday cake. Especially if you top it with sprinkles…

Here are some of the healing ingredients in this recipe for birthday cake chia pudding:

Chia seeds are ancient seeds that got their name from the Mayan word for “strength”. These tiny seeds have the unique ability to turn liquid into a gel-like substance when making puddings and they are great added to smoothies and shakes. They are rich in omega-3 fatty acids,and fiber. And, because they are so high in antioxidants, they help keep your skin looking younger. They help optimize both your digestive system and your cardiovascular system.

In Asian medicine, we use coconut to strengthen the body, reduce swelling, and stop bleeding. Coconut kills viruses, bacteria, and parasites. It’s good for all types of infections and viruses in the body, including the flu, bronchitis, tapeworms, urinary tract infections, and herpes. And perhaps most importantly, it helps you keep your mind sharp and it makes it easier for you to focus. I like to use full-fat canned coconut milk for this chia pudding.

Pure maple syrup contains antioxidants that help reduce inflammation in the body (think inflammatory bowel syndrome or heart disease). It also contains zinc, calcium, and magnesium. It’s much lower on the glycemic scale than traditional sugar. Whenever possible, use a darker (grade B) syrup because the nutritional composition is better than that of lighter syrups.

Maca Root is one of the superfoods I take every day. It has many healthy benefits including increasing libido, helping menopausal symptoms, relieving menstrual cramps, regulating hormones, and increasing energy.

Baobab is a superfood that is a powder made from an African fruit. This amazing superfood has tons of vitamin C to boost your immune system and it’s great for energy. Sometimes I put some in my water bottle to keep my hydrated throughout the day. It’s easy to put a scoop in anything for a pick-me-up.

Happy birthday to you! This quick, easy, healing, make-ahead breakfast will make you smile from ear to ear!
Ingredients
  • 1 13.5 oz can full fat coconut milk
  • 2 tsp vanilla extract
  • ¼ cup pure maple syrup
  • 4-1/2 Tbs chia seeds
  • 1/1/2 tsp maca root powder (optional)
  • 1 tsp baobab powder (optional)
  • Fruit-sweetened sprinkles (for topping)
Instructions
  1. Put all ingredients in a mason jar.
  2. Cover.
  3. Shake it up really well (really... dance around with it and work up a good sweat)
  4. Put it in the fridge overnight.
  5. Scoop into individual bowls in the morning.
  6. Top with sprinkles and enjoy.

Blackberry Kombucha Ice Pops

I love ice pops. I love kombucha. Oh, and fresh berries… well, they are divine! So, these blackberry kombucha ice pops have become my new favorite dessert.

If you are one of those people who craves sweets after dinner (or after lunch, or after anything…) then you are the perfect candidate for these ice pops. I mean, think about it. If these were in your freezer now, you could just grab one anytime you want one. With no guilt. Yup, absolutely none.

These ice pops are made with no added sweeteners. But they are sweet. And tangy. And have a bit of a pop from the fizziness of the kombucha.

I made 6 of them several days ago and I have been slapping my own hand away so that I don’t eat them all before someone else has a chance to try them.

If you have never tried kombucha, you really must. Kombucha is made from fermented tea and it is great for your digestion and your general health. There are so many flavors available, pick whatever makes your tastebuds sing. Oh, and feel free to change up the type of berry. I think I’m using raspberries next time… yum!

  • 12 oz fresh blackberries
  • 8 oz kombucha (I used Cranberry kombucha, but use whatever flavor you like)
  • 2 Tbs pomegranate seeds
  • 1 scoop Vital Reds powder (This is optional, but if you have a red nutritional powder, I recommend putting a bit in.)
Instructions
  1. Put all of the ingredients in a blender.
  2. Whiz it up.
  3. Pour into ice pop molds.
  4. Place in freezer until fully frozen.
  5. Enjoy!

Paleo Lemon Cookies

Lemon peels help detoxify your body and boost your immune system!

These cookies are what I call a “pantry dessert”. That means that I can whip it up without having to go to the store for anything. These paleo lemon cookies are made with a bunch of ingredients found in many healthy pantries and with some fresh lemons.

Everyone who knows me knows that desserts are not my forte. I oftentimes get an A for effort, but a C for taste. I was the mom who used to burn the chocolate chip cookies that you just had to slice and bake. I attribute this lack of baking ability to the fact that I like to taste as I go and I hate to measure. My daughter is constantly slapping her hand to her forehead in frustration when she watches me bake — she’s a great baker and understands the value of the science behind it.

So, believe me when I tell you, that these paleo lemon cookies are easy. I made them and they came out great the first time. I took the original impressive recipe from a great blog, Texanerin Baking and it’s a winner — even with my not-so-standard adjustments.

These cookies taste like deliciously sweet sugar cookies with a hint of lemon. The first night, we ate a bunch of them because they were so good. The second day, the taste was the same, but the texture changed to be like moist soft macarons. The taste was still just as amazing, but we crumbled them on top of smoothie bowls and yogurt parfaits. I highly recommend that you try this too!

Lemon peels contain calcium, potassium and vitamin C. Lemons are good for your stomach, they help detoxify your body, they balance your pH and they act as an antibacterial. Hemp seeds are a superfood. They are high in protein, easily digestible, and contain a full complement of amino acids. They contain disease-fighting phytonutrients that are good for your blood, immune system, tissues and skin. Hemp contains a specific fatty acid that acts as a powerful anti-inflammatory. It also helps balance hormones, making it a great choice to fight the symptoms of PMS. This super seed is also good for your liver and your brain.

Pure maple syrup contains antioxidants that help reduce inflammation in the body (think inflammatory bowel syndrome or heart disease). It also contains zinc, calcium, and magnesium. These cookies taste like deliciously sweet sugar cookies with a hint of lemon. They are completely grain-free and dairy-free and contain healing ingredients!
Ingredients
Instructions
  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk the coconut oil, maple syrup, lemon zest, and lemon juice.
  3. In another bowl, combine the coconut flour, almond flour, baking soda, salt, and hemp seeds.
  4. Stir the dry ingredients into the wet ingredients.
  5. Roll the dough into golf-ball size balls and place them on a parchment-lined baking tray, spacing them at least a few inches apart.
  6. Press down on the cookies with a fork or your hand. (I used a fork, but found it much easier when the fork was wet.)
  7. I got 13 cookies out of my dough, but whatever you get, is fine.
  8. Bake until the cookies are slightly brown on the edges and a bit on the tops too; mine took 23 minutes, but the original recipe says to check them after 12 minutes...
  9. Remove from oven and let cool completely before removing them from the tray.
  10. I stored my leftovers in a sealed container and they were awesome the next day, just a lot softer. (I highly recommend crumbling them up the next day and topping your yogurt or smoothie bowl with the crumbles...yum!)
  11. Enjoy!

Grain-Free Peanut Butter Cookies

These grain-free peanut butter cookies will make you smile.

In our house, dessert is a must. And this is because Steve thinks he has to have some kind of dessert after every dinner. I don’t really go this route. I mean, if I’m full from dinner, I don’t need dessert. But, I get that a lot of people are like Steve. These paleo peanut butter cookies are perfect — paleo, delicious, and they only have four ingredients!

Having a healthy dessert that can be grabbed in an instant is imperative. I say imperative because I’m not made of steel. If I don’t have a “safe” dessert available, he will bring in all sorts of crap, and depending on what it is, I might be tempted.  It’s beyond me how a man who is so smart can think that because a box says “healthy” or “natural” that it must be so.

To avoid having desserts that make me cringe, I make it a point to have Stacey-approved treats available. It’s just so much easier than having to do the big eye-roll every time…

Now, I am no baker. For real. I kind of stink at baking. I don’t like to measure and I do like to taste as I’m creating, and these things don’t mix well with baking. That’s why I am so appreciative of all of the awesome bloggers out there who create easy and delicious desserts. Paleo Peanut Butter Cookies

These delicious cookies are made with only 4 ingredients! They are grain-free and dairy-free... and they taste incredible!
Ingredients
  • 1-1/4 cup almond flour
  • ½ cup organic creamy peanut butter
  • ¼ cup pure grade B maple syrup
  • 2 Tbs coconut sugar
  • small pinch of salt
Instructions
  1. Preheat your oven to 375°F.
  2. Combine the peanut butter, almond flour, maple syrup, and a tiny pinch of salt in a large bowl. Use a big spoon to mush it all together. (My peanut butter was in the fridge, so I let it sit in a warm place for a bit to make this easier.)
  3. Roll the dough into balls the size of golf-ball. (I made 14 balls.)
  4. Put the coconut sugar in a small bowl and roll each ball in the sugar, until well coated.
  5. Place the sugar-coated balls on a parchment-lined baking sheet.
  6. Use a fork to press down on each cookie (in 2 directions).
  7. Bake just until the edges start to brown a bit, but not too long. I found that 10 minutes was perfect.
  8. Remove from oven and let the cookies cool completely.
  9. Enjoy!

Paleo Blueberry Cobbler

You know when you go to the market looking for organic berries and you have to to a double-take when you see the price? Sometimes I can’t believe what I’m seeing… it’s like I’m being punked or something. But, finally, it’s that time of the year when the price of berries drops down to a reasonable level. Last week, there were blueberries everywhere! And when I checked the price, not only were these gorgeous blueberries affordable, but they were packaged in huge containers. So, I bought 2 containers. I didn’t need to, but I did. Did I tell you these containers were HUGE…

I’m sure it’s happened to you: you get home from the market, and you’re all kinds of smug because you got some great deals, and then you look at what you bought and you have no idea how you are going to use it all up…

Sooooooo, I put some of these gorgeous blueberries in the freezer. And I ate a lot of them right out of the container. And I made coconut yogurt parfaits. And a smoothie bowl. And then, I made this paleo blueberry cobbler. It’s just awesome. I made more than we could eat, so we ate half, and I froze the other half. Yesterday, I defrosted the frozen cobbler and when I ate it today, it’s just as awesome. And surprisingly, it tastes just as good cold as it did warm.

Cashews are really a multi-tasking nut. I use them all the time so I say it all the time: Cashews have a lower fat content than most other nuts. Most of the fat in cashews is unsaturated and is made up of oleic acid; this is the same acid that is found in olive oil, making these nuts a heart-healty choice. I used cashew milk in this cobbler, but you can substitute whatever non-dairy milk you like.

Tapioca is a starch that comes from the cassava plant. It’s not really a flour in the traditional sense; it’s grain and gluten free. It’s good for your circulation and your digestion. Oftentimes I will make recipes (like this one) with tapioca flour — it crisps things up well and it works as a great thickener too.

This paleo blueberry cobbler is so refreshing. It also freezes well... and the ingredients are so healing... this one's a keeper... it's summer on a plate!
Ingredients
  • 3 Tbs coconut oil
  • 1 cup coconut flour
  • 1-1/2 cups cashew milk (substitute almond milk or another non-dairy milk if you prefer)
  • ⅓ cup coconut sugar, plus extra for sprinkling on the top
  • ½ tsp baking soda
  • ¼ cup hemp seeds
  • 1-1/4 cups tapioca flour
  • juice of ½ a lemon
  • ¼ tsp pure vanilla extract
  • ¼ tsp sea salt
  • 2-1/4 cups fresh blueberries
Instructions
  1. Preheat your oven to 350°F.
  2. Put the coconut oil in a baking pan (mine was 9x9-in.), and put the pan in the oven to melt the oil while the oven is heating.
  3. In a large bowl, combine the coconut flour, cashew milk, coconut sugar, baking soda, hemp seeds, tapioca flour, lemon juice, vanilla, and salt. Stir until combined.
  4. Spread this batter into the baking dish with the melted coconut oil.
  5. Pour the blueberries over the batter and press them into the batter.
  6. Sprinkle the top with coconut sugar.
  7. Bake until golden and a bit crisp. (Mine took 1 hour and 5 minutes.)
  8. Remove from oven and let the pan cool a bit on a rack.
  9. Enjoy!

Coconut Blood Orange Ice Pops

These coconut blood orange ice pops will make you feel like a kid again!

Ice pops are like art for me. I always wanted to be a great painter, but I wasn’t blessed with the skills for this endeavor. I can’t even draw a good circle… So, for me, food is my art. I love when you can take creative license with food and have it turn out beautiful and delicious. Ice pops are one of the easiest things you can make and yet they can be one of the most creative.

And, luckily, these awesome frozen treats can be made with great healing ingredients, with little or no calories, and can be customized to your particular tastes.

Steve likes to have dessert after dinner. Me, not so much… I prefer to stay away from the sweets after dinner, mostly because I have very little self control around them. If you have this issue, ice pops are perfect. If you can grab one of these out of your freezer, you will feel like you are indulging but with no detrimental effects. And, the dessert-loving-bad-influence-person (who shall not be named) is satisfied too, because these really are decadent tasting.

If I am being totally honest, I made these ice pops the other night when I was having a few good friends over for dinner. My friend Val and I loved them, but Frank and Steve… well, I think they would have preferred a big hunk of cake. That’s not to say that these ice pops are a feminine dessert, but they are not heavy like chocolate cake either… but this is one of the characteristics that make them so awesome…

So, I’ve been experimenting… wait until you see some of the ones I’ve tried! I’m actually really excited to start posting some of these pics and recipes. Once I got in the groove, there was no stopping me. Some of them are beautiful, some are delicious, some are just plain weird (and, not surprisingly, the latter category is my favorite)!

Anyway, this recipe for coconut blood orange ice pops is easy, healthy, and pretty. I love the layered effect, and it’s so easy to achieve. I tried this recipe both ways — some I layered and some I just stirred everything together and went for a creamier pop — you can choose (I like the layered ones a bit better)…

Coconut Sugar is made from the sap of the coconut palm. This sweetener won’t cause the drastic blood-sugar spikes that are associated with traditional white sugar. It has significantly less fructose than agave nectar, meaning that it is not as easily stored in the body as fat. Another plus is that it is not chemically altered. Coconut sugar is also a very sustainable sugar, making it the environmentally friendly choice.

Blood Oranges are oranges with extra anthocyanins. Anthocyanins are compounds found in many plant-based foods. These compounds can help prevent certain cancers and can help with brain function. Oranges, of any kind, will help boost your levels of vitamins A, B and C. In Chinese medicine oranges have been used for many years to help coughs, colds and anorexia. Lately, oranges have been widely touted for their ability to help heal colon cancer. I peel my oranges and lay the rinds in the sun to dry, and save them for tea or for cooking because the orange rinds are an actual Chinese herb. I dry out the peels of oranges, tangerines, clementines… whatever I have. Dried tangerine peel, or “chen pi” as it’s known in Chinese medicine, is one of the greatest and most easily accessible herbs around. It’s especially good for digestive issues like abdominal discomfort, distention, fullness, bloating, belching, and nausea. It’s also great if you have a cough with a heavy or stuffy chest.

Ingredients
  • 1 13.5 oz can full-fat coconut milk
  • 1 tsp pure vanilla extract
  • ¼ cup coconut sugar (here's a good one)
  • 1 cup blood orange juice (I was able to find organic blood orange juice in a bottle in the market, but you can juice your own or use another type of juice.)
Instructions
  1. Whisk together the coconut milk, vanilla, and coconut sugar.
  2. Fill 6 ice pop molds about ½ to ⅔ full with this coconut mixture.
  3. Place in freezer for 15 minutes.
  4. After 15 minutes, fill the molds the rest of the way with the blood orange juice.
  5. Freeze until completely frozen.

It’s getting to be the dog-days of summer — but if you’re a dog lover like I am, it’s not a bad thing at all! Yes, I know, nobody likes those ridiculously hot and humid days — the ones where the air is heavy and everything seems to move in slow motion. But summer is awesome! Even when it’s hot! You can go outside with nothing but shorts and a tank. You can walk down the street drinking the hugest iced coffee or smoothie. You can smell that warm, sweet, summery scent of the flowers and trees…

And here, in NYC, where everyone aspires to leave the city in the summer, I am happy as a clam. I’m not crazy though. I don’t turn on my oven much, and I stick to the shady side of the street. And, I eat things like this awesome berry fig yogurt parfait.

I hesitate to even call this parfait a recipe — because really you can make it however you like — but I am including the recipe for how I made this one because it’s so delicious and cooling and refreshing.

By the way, I made my parfait dairy-free by using the most delicious coconut yogurt I’ve ever had. I used Anita’s coconut yogurt — it’s so good, I might even say it’s life-changing!

This parfait is as easy as it is healthy:

In Asian medicine, we use coconut to strengthen the body, reduce swelling, and stop bleeding. Coconut kills viruses, bacteria, and parasites. It’s good for all types of infections and viruses in the body, including the flu, bronchitis, tapeworms, urinary tract infections, and herpes. Bee pollen is considered one of the most nutritious substances you can put in your body. It is higher in protein than anything animal-based and it contains an amazing amount of amino acids. It’s good for your energy, your skin, your breathing and your allergies. Add a spoonful to whatever you can. I know there are differing opinions as to whether bee pollen is vegan; so if you would prefer to leave it out, that’s just fine.

Creamy Vegan Chocolate Mousse

This creamy vegan chocolate mousse is so delicious that nobody will miss the dairy!

Last year when I was on vacation in Carmel, California, I had the best chocolate mousse in the world. I’m not being overly dramatic. It really was The Best. Chocolate. Mousse. Ever. You know how sometimes out of the blue, for no reason at all, something just pops into your head? Well, the other night that chocolate mousse popped into my head. I really, really wanted some.

OK, so I don’t eat dairy now and I don’t eat sugar now, so what was I to do?

Also, I love eating dessert but I am not a great baker/dessert maker.

I posted a recipe for a healthy chocolate mousse a long time ago, so I looked it up. I remembered it being good, but it really wasn’t that same creamy decadent goodness as the mousse now stuck in my head. So, I played around with the recipe. And now, this recipe is awesome; it’s really, really creamy. Maybe it’s not the same as that full-on dairy-ed up version in Carmel, but it’s just as satisfying. And, don’t worry, it’s not just me who loves it… Steve (my dairy-eating husband) gives it a big thumbs up too!

Oh yeah, did I mention that this creamy vegan chocolate mousse recipe requires no cooking. It’s raw. All you need is a blender. I used my Vitamix and it came out silky and dreamy. I don’t know what the texture will be like if you use a regular blender, so if you try it please let me know.

Avocados are one of my favorite foods, both for their health benefits and because they taste great. In Chinese medicine, some practitioners recommend avocados to raise the sperm count. I like them because they are good for anemia, dry skin, palpitations and hot flashes due to menopause.

Raw cacao is a superfood. It is packed with magnesium, iron, zinc and other minerals. Not only is it packed with health benefits, but it actually has properties that help the body absorb nutrients better and it’s filled with antioxidants. Cacao can actually be translated as “food of the gods”… Raw cacao can help lower blood pressure, promote healthy heart function, improve digestion, and may even help increase the libido.

Cashews are good for a host of conditions including fatigue, frequent urination, knee and lower back pain and low libido. They are also great for energy, constipation, and dizziness. This recipe uses cashew butter to make the mousse deliciously creamy.

Maca Root is one of the superfoods I take every day. It has many healthy benefits including increasing libido, helping menopausal symptoms, relieving menstrual cramps, regulating hormones, and increasing energy.

In Asian medicine, nuts are known to be good for your brain, heart, skin and reproductive system. Almonds are particularly nutritious. They are a good source of protein and they give you energy. And, they are gluten-free. Almonds will help relieve a cough and asthma and are also good for constipation. Even if you are not on a dairy-free diet, almond milk is the way to go.

This is the creamiest chocolate mousse ever! It's vegan. It's healing. It's amazing. And, it's raw -- that's right, no cooking required!
Ingredients
  • flesh of 1 avocado
  • ¾ c almond milk
  • 3 Tbs raw cacao powder
  • 1 Tbs plus 3-tsp pure maple syrup
  • 1-1/2 Tbs cashew butter
  • 1 tsp maca root powder (optional)
  • For optional topping: vegan chocolate chips (or any chips you like)
Instructions
  1. Put all of the ingredients (except the topping chips) into a high-speed blender and blend until smooth.
  2. Spoon into small ramekins.
  3. Top with chips if you like.
  4. Cover with plastic wrap.
  5. Refrigerate until cold, at least a few hours.
  6. Enjoy!

Paleo Lemon Cake

Paleo Lemon Cake! This is so delicious; it’s kind of like a cake grandma used to make, but way healthier!

I’m a chocolate lover. But when I tasted this cake, I thought to myself: hmmmm… I think this might be better than chocolate.

And then, I remembered that it was grain-free. Yup, I actually forgot this is a paleo cake when I tasted it… it’s that good!

If you’ve been following me at all, you may know that I don’t consider myself the best baker. I’m a great cook, but baking… not so much. I’m not much of a measurer or a perfectionist, but with baking when you just wing it or go with the flow, sometimes it’s just a hot mess.

I saw a recipe for lemon bread on a blog called Connie’s Finally Losing It. Connie calls it a bread, and I’m sure hers is perfect and delicious. When I made it, mine didn’t look quite as perfect, and it tastes more like a cake, but OMG, it is just delicious!

And yes, it’s really as good as chocolate. I think part of this is due to the fact that when I made the glaze and poured it over the cake, instead of it sitting prettily on top of the cake, mine soaked into the cake and made it so sweet and lemony, that I can’t imagine doing it any other way.

I put the leftovers in the fridge and we’ve been eating it cold all week. So, put your chocolate bias aside, and try this lemony, sweet, tart, amazing cake!

You should make this cake because it’s delicious. But you should also make it because it’s so good for you:

Lemon peel contains calcium, potassium and vitamin C. Lemons are good for your digestion, they help detoxify your body, they balance your pH, and they act as an antibacterial. They also can soothe a sore throat, lessen a cough, and hydrate the body.

I am a big proponent of eating the whole egg. So many of the nutrients and the taste are in the yolk; I’ll never understand separating nature’s perfect food. Eggs help with many types of dryness in the body. If you have a dry cough or a frog-in-your-throat, try eating some eggs. They have also been shown to help women with various conditions during and after pregnancy.

Honey is an amazing food. It is also a Chinese herb (Feng Mi). Raw honey is honey in its purest form; it has not been filtered, strained or heated above 115 degrees. This means when you eat it, the enzymes, anti-oxidants and nutrients haven’t been disturbed. I use raw honey in my tea, smoothies and in any recipe that calls for honey. Raw honey is solid and may need to be melted before you use it, but this is easy and only takes a minute or two. Honey helps with constipation, some coughs, and some stomach ulcers.

This lemon cake is sweet, and tart, and when I ate it, I forgot it was grain-free! It's so healthy and delicious and simple -- it will become your new favorite dessert!
Ingredients
  • 1 Tbs coconut oil to grease a loaf pan
  • For cake:
  • 6 large eggs
  • ¼ cup coconut oil, melted and cooled
  • juice from 2 lemons plus enough almond milk to equal a total of 1 cup liquid
  • zest from 2 lemons
  • ⅓ cup raw honey, melted and cooled slightly
  • ⅔ cup coconut flour
  • 1-1/4 tsp baking soda
  • ¼ tsp sea salt
  • For glaze:
  • 2 Tbs coconut oil
  • 2 Tbs raw honey
  • 2 Tbs almond milk
  • zest and juice from 1 lemon
  • ½ tsp pure vanilla extract
Instructions
  1. Preheat the oven to 350°F.
  2. Grease a loaf pan with the coconut oil.
  3. Put all of the cake ingredients into the bowl of a mixer and mix until well combined.
  4. Pour into the loaf pan.
  5. Place on the middle rack of the oven and bake until a knife inserted into the center comes out clean and the top is golden brown. Mine took 49 minutes. (Please watch the cake carefully, because the original recipe calls for only baking the cake for 32-45 minutes.)
  6. Remove the cake from the oven and let the pan cool on a rack.
  7. When the pan is cool, remove the cake and let it cool completely on the rack, out of the pan.
  8. Make the glaze: put all of the glaze ingredients into a small pot and simmer over low heat until it's all melted together. Turn off heat and let cool slightly
  9. When the cake is completely cool, pour the glaze over the top of the cake. (My glaze was very liquid, but I poured the whole thing over the cake and let it soak in and it was delicious. In the original recipe, the glaze in the picture looks while and thick and pretty... I'm just letting you know that either way it should be delicious!)
