The sauce on these Vegan Creamy Zoodles is so creamy and so delicious that you won’t even realize you are fueling your body with an amazingly healthy dish.
I’m a big fan of vegetable noodles… BUT not as a replacement for pasta. I mean, nothing can replace the greatest food on the planet… So, as long as these zoodles or noodles are not trying too hard to mimic my beloved pasta dishes, I’m happy.
So, why then do I say I love veggie noodles? Oh… let me count the ways: I love serving all types of these amazingly colorful veggie spaghettis and noodles and rices as a side dish for just about everything. They can be served hot as a healthy side to chicken or eggplant Parmesan. When served chilled, they pair perfectly with whatever protein you are serving — BBQ anything, roasted fish, a veggie burger. Really, there are so many ways to prepare veggie noodles, that you can safely keep some in your fridge without ever having to worry that you won’t use them.
I like to buy my zoodles and sweet potato spaghetti, and cauliflower rice, ready-to-go in the clamshell packages you find in so many grocery stores now. My spiralizer (and I do have one) is now way in the back of a really high cabinet in my kitchen. It’s easy to use, but I don’t want any excuse not to eat my veggies this way, and believe me, I can come up with plenty of reasons not to set up the spiralizer…
Anyway, let’s get back to these Vegan Creamy Zoodles. This recipe is genius. I got the original recipe from one of my favorite vegan bloggers, Healthy Living James. I’ve made this recipe many times this summer and each time I change it up a bit to suit my needs. So, feel free to make it your own by adding whatever veggies you have in the back of your fridge. Feel free to spice it up a bit with some chipotle peppers — that’s been making my family happy. I think the next time I make this dish, I’m going to add tons of scallions and garlic to really boost our immune systems. I’ve been serving these Vegan Creamy Zoodles to tons of people this summer while we are at the beach. This is one of those dishes that everyone loves. My mother-in-law loves them (we just don’t tell her she’s eating raw zucchini), my family loves them, and younger people love them also. And, the fact that this recipe is so easy to make, means we can have it as much as we want.
Here are some of the amazing healing ingredients in these Vegan Creamy Zoodles:
Zucchini cools your body off and makes you feel better during those hot days of summer. It helps your body release excess heat and it will make your mind feel more calm.
Garlic is amazing in its antiviral and antibacterial capabilities. Garlic is actually a Chinese herb (Da Suan). It’s used to kill toxins and parasites and also to reduce swelling in the body. It’s what I call a great “A” herb: anesthetic, antibacterial, anti fungal, antioxidant, antiviral, etc….
In Chinese medicine, we use tomatoes to aid in digestion and to help detoxify the body. They are also good to combat excess cholesterol, lessen inflammation and curb asthma. Tomatoes can also quench thirst, and they can help fight some kidney infections.
Cashews are really a multi-tasking nut. I use them all the time so I say it all the time: Cashews have a lower fat content than most other nuts. Most of the fat in cashews is unsaturated and is made up of oleic acid; this is the same acid that is found in olive oil, making these nuts a heart-healty choice.
Basil has anti-viral and anti-bacterial capabilities. It also is good for settling your stomach, and it’s good at lessening the symptoms of the common cold and its accompanying cough. Basil is a spiritual herb — the scent actually calms you; you can boil some in a pot and let the aroma fill the air, you can just leave some around the house, you can toss a bunch in your bath water (I love to do this), or you can use an essential oil with basil to get some great calming effects.

These Vegan Creamy Zoodles are the perfect side dish for everything. The sauce is so creamy and delicious that you will forget you are eating your veggies!
Ingredients
1 large clamshell container of zoodles (or you can spiralize a few zucchini yourself)
2 ripe tomatoes, cut into wedges
½ cup fresh basil leaves, torn into bits
For sauce:
1-1/2 cups raw cashews (I don't soak mine but if you don't have a high-speed blender, I recommend you soak your nuts in room temperature water for at least an hour.)
1 cup unsweetened plain non-dairy milk (I like to use oat milk or cashew milk)
2 garlic cloves
1 tsp sweet paprika
1 tsp onion powder
½ tsp chipotle chili powder (or more, to taste)
½ tsp chili powder
salt and pepper, to taste
Instructions
Place all of the sauce ingredients in a blender and whiz it up until really creamy and smooth.
Combine the zoodles, tomato and basil in a large bowl.
Pour the sauce over and stir with tongs to distribute.

The avocado makes the pesto so creamy and it’s so easy to make. It’s a really pretty green… And the noodles are made from zucchini… deliciously creamy and healthy.

15. Buckwheat Ramen Soup
Ramen soup is so delicious, but if you eat grain-free, you can’t have traditional ramen. I used buckwheat ramen noodles in this soup; buckwheat is a seed, not a grain.
Buckwheat helps lower blood pressure and it’s good to stop diarrhea. Ginger is great for your immune system and for your digestion.
This recipe is great on 2 different fronts. First, there’s the pesto. OMG — this is sooooooooo good! And, it takes only 5 minutes to make. Next, there’s the beauty and deliciousness of the grain-free pasta made from chickpeas. Well, this is nothing short of genius!
Arugula boosts your libido and cools your body down. Chickpeas calm the spirit.
Slow-roasting this fish at a really low temperature keeps it so tender, juicy, and fresh tasting.
Parsley is considered an anti-cancerous herb. And, it freshens your breath! So, if you get a chance to use it for something other than a garnish, I say go for it!

Wild salmon is a great thing to add into your diet to help increase your athletic performance — this fish can help reduce aches and pains in your muscles and joints, and it’s a good source of iron.

Let me tell you, rather immodestly at that, that this salad is incredible. It hit all it’s marks. The buckwheat is chewy. The sweet potatoes are warm and sweet. The tempeh tastes like unexpected little pieces of smoky bacon. The spinach and arugula are refreshing. The cherries are tart. The dressing is tangy. The pecans are crunchy. Okay, enough praises. But you’ve got to make this!
Buckwheat is a seed, not a grain. It is great to eat if you have diarrhea. It also helps lower blood pressure, stops some types of sweating, and has a good amount of vitamin E, and has antioxidants that can help fight cancer and heart disease.

Fish is great to eat if you feel like you need more energy. It’s also helps with diarrhea and hemorrhoids. I used cod for this recipe, but any firm fleshed sturdy white fish would work great. Cod, like many fish varieties, is good for the cardiovascular system; it helps protect against heart attacks and strokes and helps regulate blood pressure.
Turmeric is actually a Chinese herb (Jiang Huang). It is great for reducing inflammation throughout the body. If you suffer from aches and pains in your joints, try turmeric. It can help relieve menstrual pain and some other abdominal pains but, if you are pregnant, ask your doctor before you eat too much turmeric.
23. Simple Fresh Vegetable Soup
One of the things that I tell my clients is that if you make a big pot of healthy soup at the beginning of the week, you will have no reason to grab unhealthy snacks when you come home famished.
This vegan soup contains lots of fresh vegetables to heal you.
This dish is especially great because the zucchini noodles are mixed with buckwheat noodles, so in the end, this slurpy and spicy pasta dish tastes like real pasta.

This is a grain-free pasta dish made with a dairy-free cream sauce… and it is the most delicious and creamy pasta you can have.

Shaved Brussels sprouts are awesome. I’ve been using them for everything. My true favorite thing to make with them is Caesar salad. Yes, it sounds weird, but don’t knock it til you’ve tried it. I like to mix these shaved sprouts with kale or Romaine lettuce, slather them in my fav Caesar dressing and I’m a happy camper. This recipe for shaved Brussels sprouts & apple salad is a kicked-up version of my traditional Caesar recipe. I say kicked up because it also has apples and bacon in it. Really, what could be bad?
Obviously this recipe is not vegan, because…. well… umm… I’ve used bacon in it. But, I can honestly tell you that I’ve eaten this so many times, in so many ways, and there is so bad version. You can leave out the bacon or use a vegan bacon or a smoky mushroom to easily veganize this salad.
Oh, and I use my favorite Caesar dressing recipe — which just happens to be vegan — so really you can go full out vegan pretty easily if that’s your thing. My thing changes so often and obviously I’m a mess of contradictions because this version of shaved Brussels sprouts & apple salad with the bacon with my vegan cashew Caesar dressing is my favorite way to eat it so far!

Lately, I’ve been swapping out traditional potatoes for sweet potatoes in every recipe that I can. When I was a kid, my favorite thing to order in a diner was french fries with gravy. OMG… just thinking about it makes me both smile and cringe at the same time. The other day when I was at lunch by the beach, I ordered sweet potato fries, rationalizing that this was somehow healthier than ordinary fries. Bahahaha — it’s amazing the rationalizations you can talk yourself into — this was so unhealthy and the second I was done eating, I was sorry I ate it.
So, back to this awesome recipe for healthy sweet potato salad. This is perfect.
And NO MAYONNAISE — the creamy dressing is made with parsnips!!!
And you still feel good after you eat it. It’s got sweet potatoes and dill and some crunchy radishes. Really, it’s clean tasting and creamy at the same time. It’s the perfect side dish for everything you make this summer.
I served this beautiful, colorful salad with fish one night and then on top of a crisp green salad on the second night. Both were just perfect!

Parsnips will help you knock a cold out of your system. So if you have a common cold with headaches, muscle aches, and a stuffy nose, try eating parsnips. They can also help ease arthritic pain.
Dill is considered a chemoprotective in that it can help neutralize some carcinogens. It also helps fight bacteria in the body.
Scallions, as I tell you often, are one of my favorites. In Chinese medicine, the root of the scallion is a healing herb (Cong Bai). I always keep scallions on hand in my refrigerator so that I can whip up a batch of cold and flu fighting tea (scallion roots and ginger) the second anyone feels that scratchy throat coming on. It helps the body sweat out toxins. Scallions are antiviral and antibacterial; they are good for the common cold and general nasal congestion — just don’t eat too many if you have a fever.
Radishes are good for your tissues, blood vessels, teeth and bones. They also can help regulate your blood pressure and can ease the symptoms of asthma and other respiratory ailments. In this sweet potato salad, they also add a good amount of crunch and peppery bite.
This healthy potato salad is so colorful and so flavorful, you'll love it even more than your favorite mayonnaise-y dish!
Ingredients
1 lb sweet potatoes (I used a mixture of orange, white, and purple ones), unpeeled, cut into ½-in. pieces
1 Tbs extra-virgin olive oil
2 parsnips, peeled, cut into 1-in. pieces
1 cup vegetable broth
pinch of sea salt
1 Tbs fresh dill, chopped
2 radishes, sliced
2 scallions, sliced
Instructions
Preheat the oven to 400°F convection setting, or 425°F regular bake setting.
Line a baking sheet with parchment paper.
Toss the potatoes with the oil and spread them out on the baking sheet.
Sprinkle with sea salt.
Roast the potatoes in the oven for about 15 - 20 minutes or until they are cooked through.
Meanwhile, put the parsnips, vegetable broth and a pinch of sea salt into a medium saucepan.
Place over medium heat and bring to a boil.
Reduce heat and simmer until the parsnips are soft, about 20 minutes.
Pour the parsnip mixture into a blender. Cover the blender with a clean dish towel and hold that towel tight over the top while you blend until smooth. NOTE: the towel will allow steam to escape so you can prevent the top blowing off and burning you!
In a large bowl, mix together the roasted sweet potatoes, radishes and scallions. Pour in the parsnip dressing and gently stir to combine.

In my mind, the best salads have 5 components: fresh greens, something chewy and substantial, something sweet, something tangy, and something unexpected. This Buckwheat Sweet Potato Arugula Salad has got ’em all!
When I lived in the suburbs for many years, I would go to the supermarket and stock up for the week. I was always a pretty good planner and I would have some idea of what I would need for the whole week and I would make a list and go buy those very things. That kind of planning was a necessity then. I mean, I had kids, a full-time stressful job, a long commute… it was the only way to get it done.
Oh, how things have changed. Now, I live in the very city I used to spend hours commuting to. I have a small kitchen, and, my kids are out of the house. Now, when I go to the market, I like to buy just what I feel like cooking and eating in that moment. Well, plus whatever unnecessary items catch my eye… This feels like such a luxury to me and I love it!
I very rarely crave salad for dinner. I just don’t think most salads are satisfying enough to be a good dinner. But, one day last week, I was craving salad. But I knew that I wanted some of it to be warm. My fav salad of all times is from an Italian restaurant that puts steaming hot veggies on top of ice cold greens… that’s what I wanted. But, I also wanted it to be vegan and to be filling at the same time. Oh, and I didn’t feel like eating too many beans. Wow, I can really be difficult at times…
Let me tell you, rather immodestly at that, that this salad is incredible. It hit all it’s marks. The buckwheat is chewy. The sweet potatoes are warm and sweet. The tempeh tastes like unexpected little pieces of smoky bacon. The spinach and arugula are refreshing. The cherries are tart. The dressing is tangy. The pecans are crunchy. Okay, enough praises. But you’ve got to make this!

In Chinese medicine, we also believe that cherries help to maintain the body’s “essence” or life-force. I always keep a bottle of organic black cherry juice in the fridge and I often drink a few ounces before bedtime or put a little in my smoothies. I also keep bags of frozen cherries in the freezer. And when fresh cherries are in season, you can always find a big bowl in my kitchen. This recipe uses tart dried cherries — I love them and use them as a substitute for raisins in many recipes.

This salad has everything you could ever want. It's filling and tangy and sweet and just so delicious! And it has so many healing ingredients!
Ingredients
1 cup raw buckwheat, cooked according to package directions, then drained and rinsed with cold water (you should end up with about 2 cups of cooked buckwheat), and then immediately tossed with 2 Tbs extra virgin olive oil
1 medium sweet potato (I used a purple one), washed and cut into 1-inch pieces
1 Tbs coconut oil, melted
sea salt and black pepper
1-1/2 cups fresh arugula, chopped
1-1/2 cups fresh baby spinach, chopped
⅓ cup pecans, chopped
2 Tbs dried tart cherries
3 oz Facon Bacon tempeh, cut into pieces (or substitute another cooked flavor of tempeh or whatever other meat substitute you like)
For the dressing:
¼ cup extra virgin olive oil
2 Tbs balsamic vinegar
sea salt and black pepper, to taste
2 tsp Dijon mustard
2 tsp coconut sugar
Instructions
Preheat the oven to 450 degrees.
Line a baking sheet with parchment paper.
Spread the sweet potatoes onto the sheet and toss them with the coconut oil and some salt and pepper.
Roast in the oven for about 20 minutes, or until the sweet potatoes are done.
Meanwhile, make the dressing by whisking all of the ingredients together. Set aside.
In a large bowl, combine the buckwheat, pecans, arugula, spinach, Facon Bacon, and cherries.

I have a fickle relationship with potatoes. Sometimes I love them and sometimes I hate them. Well, really, I always love the taste of them, but I don’t always love the way my body reacts to them. That being said, when I use really good quality organic potatoes, I’m usually a happy camper. And, in my book, there is nothing better than a good potato salad as a side dish. For everything. And this 4 ingredient vegan potato salad is the easiest side dish ever. And just to sweeten the pot — it stays delicious for many days in the fridge…

“What makes this potato salad vegan”, you ask? It’s made with an aquafaba-based mayonnaise. Aquafaba is a creamy blend of chickpeas and kombu and it’s awesome (way better than it sounds)! You can buy aquafaba based jars of mayo now in some markets. This condiment is truly the work of a genius.
When I made this 4 ingredient vegan potato salad last week, I served it several times. To several different people. Not even one of them knew it wasn’t made with a full-fat creamy regular mayonnaise. Even better, nobody could tell that I was serving 3-day-old potato salad. I know, it makes you a little scared of receiving a dinner invitation from me, doesn’t it?
Anyway, this recipe couldn’t be easier. It almost seems silly to post the recipe. But, I will.

Here it is the day before Thanksgiving. Eating light and healthy just seems like the right thing to do. Even more so than usual. It’s like going into survival mode. If I want to eat all that I want to eat tomorrow (and that’s a lot), then I better stick to a smart plan today. This raw corn and vegetable salad is a big part of my perfect plan.
This year, I am not hosting the holiday in my home, so I don’t have as much control over the food as I usually do. If I had my druthers, I’d have a couple of raw dishes on the table, but the likelihood of this happening is next to none… so I did the next best thing and I made a big bowl of this raw corn and vegetable salad today. Corn is one of the foods that if I can’t find organic, I just won’t eat because the crops are so heavily sprayed and are full of GMOs. As more people are expressing concern about GMOs, it seems to be getting easier to find good corn at the market. Corn actually benefits the gallbladder, is good for hepatitis, heart disease, and hypertension. Cornsilk is a Chinese herb (Yu Mi Xu). It’s often used to reduce edema, help with hepatitis and reduce the symptoms of some painful urinary conditions. If you can’t find organic fresh corn, buy a bag of organic frozen corn!

Basil is a spiritual herb — the scent actually calms you; you can boil some in a pot and let the aroma fill the air, you can just leave some around the house, you can toss a bunch in your bath water (I love to do this), or you can use an essential oil with basil to get some great calming effects.
Pineapple is great for your digestion and it can help stop diarrhea. It’s especially good in the summer because it fights against heatstroke.
Hot peppers contain more vitamin C than any other vegetable and they are good at fighting off the common cold. So, if you like spice, as I do, use a generous amount of whatever hot peppers you like. The main component of hot peppers is capsicum. Capsicum actually works with your body and mind to make you feel happy. It’s also good for reducing swelling and can relieve arthritic joint pain. If you have high blood pressure, check with your doctor before eating too many hot peppers because they can actually raise the blood pressure in some people.

1 medium tomato, finely diced

This Thai Salad With Spicy Peanut Dressing contains hemp seeds which, among other things, are great for combatting hot flashes!
Many moons ago, I used to work down by Chinatown. There were so many great Chinese restaurants for lunch but my favorite place to frequent was an awesome (although kind of dirty…) Thai restaurant that was a stone’s throw away from the courthouses. All of us Legal Aid Lawyers used to go there. It was cheap and delicious and close. I remember loving the Thai Salad With Spicy Peanut Dressing. I’ve tried to re-create it a few times and have had okay results but nothing that was as good as I remember being served at that restaurant.
Until now.
I wish I could take the credit for figuring out the awesome flavors in this dressing, but the credit goes to Jessica at jessicagavin.com. I made a few tweaks to the recipe to suit my needs (like adding hemp seeds to combat my hot flashes), but the original recipe is all Jessica’s.
I used kale, cabbage, carrots, herbs, and hemp seeds in the salad. You can use whatever you like. But don’t forget the nuts. I know traditionally this salad is made with chopped peanuts in the dressing, but I used cashews in the salad too… this really is an awesome salad!
Any salad that has a spicy and creamy dressing is pretty good in my book. But this Thai salad with spicy peanut dressing really takes it to another level. Maybe it’s because peanut butter is a real treat for me because I almost never allow myself to eat it. Maybe it’s because sriracha is awesome. I guess it really doesn’t matter why it’s so good… just try it, okay?
Here are some of the healing ingredients in this salad:
Peanuts, contrary to what some believe, are actually good for many things in your body. I don’t often let myself eat them because they sometimes contain mold and it’s really hard to find reasonably priced organic healthy peanuts. But, these popular nuts are great for lessening edema; they act like a diuretic. They can also help you if you have insomnia or if you are breast feeding. An old-time remedy is to made peanut tea and drink it for bed to promote sleep. And, peanut shells used to be used to help with high blood pressure.
Ginger is actually a Chinese herb (Sheng Jiang). It’s especially good during cold weather and also during seasonal changes. So, when winter is trying to turn into spring, and we (those of us on the east coast) get some of those cold, raw, damp days, ginger will make you feel better and will help boost your immune system. Old folklore shows that ginger was rubbed on scalps to stop baldness. And, in some circles, a ginger paste is still rubbed on arthritic joints to stop pain (don’t try this at home unless you are diagnosed with a cold-condition by an acupuncturist).
Garlic is amazing in its antiviral and antibacterial capabilities. Garlic is also a Chinese herb (Da Suan). It’s used to kill toxins and parasites and also to reduce swelling in the body. It’s what I call a great “A” herb: anesthetic, antibacterial, anti fungal, antioxidant, antiviral, etc….

This dressing is amazing! I made the salad out of kale and cabbage and carrots and so much more, but feel free to use the dressing on whatever you like!

⅔ cup peanut butter (preferably organic)
juice of 1 large lime
6 Tbs pure maple syrup
2 Tbs white vinegar
3 Tbs liquid aminos
2 tsp toasted sesame oil
2 tsp sriracha
1 tsp chopped fresh ginger
2 garlic cloves, chopped
2 Tbs water
For salad:
about 3 cups thinly sliced kale leaves
red and green cabbage, thinly sliced
⅓ cup fresh mint leaves, roughly chopped
¼ cup fresh cilantro leaves, roughly chopped
¼ cup hemp seeds
¼ cup organic peanuts, chopped
¼ cup raw cashews, chopped
½ cup shredded carrots
3 scallions, sliced
Instructions
Combine all of the dressing ingredients in a blender and whiz until really smooth.
Combine all salad ingredients in a large bowl. Toss or drizzle with dressing.
