But you’ve got to make this!

Turmeric is actually a Chinese herb (Jiang Huang). It is great for reducing inflammation throughout the body. If you suffer from aches and pains in your joints, try turmeric. It can help relieve menstrual pain and some other abdominal pains but, if you are pregnant, ask your doctor before you eat too much turmeric.

Shaved Brussels sprouts are awesome. I’ve been using them for everything. My true favorite thing to make with them is Caesar salad. Yes, it sounds weird, but don’t knock it til you’ve tried it. I like to mix these shaved sprouts with kale or Romaine lettuce, slather them in my fav Caesar dressing and I’m a happy camper. This recipe for shaved Brussels sprouts & apple salad is a kicked-up version of my traditional Caesar recipe. I say kicked up because it also has apples and bacon in it. Really, what could be bad?

Obviously this recipe is not vegan, because…. well… umm… I’ve used bacon in it. But, I can honestly tell you that I’ve eaten this so many times, in so many ways, and there is so bad version. You can leave out the bacon or use a vegan bacon or a smoky mushroom to easily veganize this salad.

Oh, and I use my favorite Caesar dressing recipe — which just happens to be vegan — so really you can go full out vegan pretty easily if that’s your thing. My thing changes so often and obviously I’m a mess of contradictions because this version of shaved Brussels sprouts & apple salad with the bacon with my vegan cashew Caesar dressing is my favorite way to eat it so far!

I served this salad as a main course with sliced chicken on the top and it was fabulous. I also ate it as-is alongside a roasted sweet potato for an awesome dinner. Versatility. Ya gotta love it!

Here are some of the great healing benefits of this Shaved Brussels Sprouts & Apple Salad:

Brussels sprouts are from the same cruciferous vegetable family as cabbage, broccoli and kale. They are rich in protein, fiber, antioxidants, vitamins and minerals. They are touted for their aid in weight loss because they have so much fiber and so few calories. Research has shown that these sprouts contain colon-cancer fighting substances and vitamins to protect against Alzheimer’s. Traditionally, they are known as more of a winter vegetable, but many markets now carry them year-round, which makes me happy because I like to eat them year-round!

It really is true that an apple a day is a good thing. Apples help to strengthen your heart. They are also good for your digestion and they can help eliminate mucus when you have a cold. Apples have a high antioxidant content, especially Granny Smiths and Red Delicious. This, combined with the fact that they have a lot of healthy fiber, is why apples are good at fighting Alzheimer’s, Parkinson’s and some cancers. They have also been shown to help ward off diabetes, high cholesterol and gallstones.

Research shows that pumpkin seeds may reduce blood sugar and increase bone density. And, because they are rich in iron, they are good if you are tired or have anemia. In Asian medicine, pumpkin seeds are sometimes used to get rid of intestinal parasites and to decrease inflammation in the body.

Cashews are really a multi-tasking nut. I use them all the time so I say it all the time: Cashews have a lower fat content than most other nuts. Most of the fat in cashews is unsaturated and is made up of oleic acid; this is the same acid that is found in olive oil, making these nuts a heart-healty choice. The cashews give this dressing a velvety, creamy texture.

Capers, although small in size, are a big source of anti-oxidants, and they actually can make you feel better emotionally because they activate the “happiness” center of your brain.

Garlic is amazing in its antiviral and antibacterial capabilities. Garlic is actually a Chinese herb (Da Suan). It’s used to kill toxins and parasites and also to reduce swelling in the body. It’s what I call a great “A” herb: anesthetic, antibacterial, anti fungal, antioxidant, antiviral, etc….

This is a creamy Caesar salad that's made with hearty shaved Brussels sprouts and apples... oh there's optional bacon in it too! This is one salad that is even better the next day!
Ingredients
  • 12 oz shaved Brussels sprouts (you can buy these store-bought at many markets, or shave your own by slicing them really thin)
  • ⅓ cup chopped, cooked bacon
  • ⅓ cup raw pumpkin seeds
  • 1 Granny Smith apple, unpeeled, sliced (discard the core)
  • One batch of my Vegan Caesar Salad Dressing
  • sea salt and black pepper, to taste
Instructions
  1. Mix all of the salad ingredients together in a large bowl.
  2. Add as much dressing as you like, and toss well.
  3. Enjoy!

Salads don’t have to be boring! Try this tomato pomegranate salad for a change of pace…

Last week I had a counter filled with tomatoes. You know how it is… I went to the farmers market and there were tomatoes everywhere. I mean everywhere. Red ones. Yellow ones. Purple ones. Teardrop shaped ones. Oval ones. Round ones. Big ones. Little ones… you get the picture… This tomato pomegranate salad was the perfect use for this gorgeous variety of tomatoes.

Back at the market, I just started filling my bag. It was like I was possessed. But, in my defense, they were so pretty — like jewels.

I made a lot of dishes with these beauties. And there were still more.

Sometimes the universe just provides you what you need. I opened my email inbox one morning that week, and there were my weekly recipes from The New York Times, and ta-da… one of them was for their tomato pomegranate salad.

Recently, I recommended that a patient with bronchitis put sliced raw onions in her socks when she went to sleep… she woke up so much better; they actually can rid the body of bacteria. (I know I’ve told you this before, but it really is awesome!) Onion is a superhero in the food world!

This is the perfect dish for all of those ripe summer tomatoes! You can customize it with whatever fresh veggies are in your fridge...
Ingredients
  • 16 oz heirloom tomatoes, cut into bite-size pieces
  • 3 Tbs extra virgin olive oil
  • 2 tsp za'atar (or use spice blend of your choice)
  • 6 Tbs pomegranate seeds
  • ¼ cup very thinly sliced red onions
  • 3 large basil leaves, sliced into thin ribbons
  • cubes of vegan cheese (or cheese of your choice)
  • juice of ½ a lemon
  • sea salt, to taste
Instructions
  1. Combine the oil and the za'atar in a small bowl.
  2. Combine remaining ingredients in a large bowl.
  3. Toss with the oil mixture.
  4. Enjoy!

I love potatoes of any kind. You can prepare them any way and I will love them. That’s why it’s so important that I make my tubers healthy. I mean, if I’m going to eat the whole bowl, I’d much rather it be a healing dish than a mess of fried or mayonnaise-y potatoes. This healthy sweet potato salad is perfect. It’s delicious and it’s healing… even if you eat more than you should…

Lately, I’ve been swapping out traditional potatoes for sweet potatoes in every recipe that I can. When I was a kid, my favorite thing to order in a diner was french fries with gravy. OMG… just thinking about it makes me both smile and cringe at the same time. The other day when I was at lunch by the beach, I ordered sweet potato fries, rationalizing that this was somehow healthier than ordinary fries. Bahahaha — it’s amazing the rationalizations you can talk yourself into — this was so unhealthy and the second I was done eating, I was sorry I ate it.

So, back to this awesome recipe for healthy sweet potato salad. This is perfect.

And NO MAYONNAISE — the creamy dressing is made with parsnips!!!

And you still feel good after you eat it. It’s got sweet potatoes and dill and some crunchy radishes. Really, it’s clean tasting and creamy at the same time. It’s the perfect side dish for everything you make this summer.

I served this beautiful, colorful salad with fish one night and then on top of a crisp green salad on the second night. Both were just perfect!

Radishes are good for your tissues, blood vessels, teeth and bones. They also can help regulate your blood pressure and can ease the symptoms of asthma and other respiratory ailments. In this sweet potato salad, they also add a good amount of crunch and peppery bite.

This healthy potato salad is so colorful and so flavorful, you'll love it even more than your favorite mayonnaise-y dish!
Ingredients
  • 1 lb sweet potatoes (I used a mixture of orange, white, and purple ones), unpeeled, cut into ½-in. pieces
  • 1 Tbs extra-virgin olive oil
  • 2 parsnips, peeled, cut into 1-in. pieces
  • 1 cup vegetable broth
  • pinch of sea salt
  • 1 Tbs fresh dill, chopped
  • 2 radishes, sliced
  • 2 scallions, sliced
Instructions
  1. Preheat the oven to 400°F convection setting, or 425°F regular bake setting.
  2. Line a baking sheet with parchment paper.
  3. Toss the potatoes with the oil and spread them out on the baking sheet.
  4. Sprinkle with sea salt.
  5. Roast the potatoes in the oven for about 15 - 20 minutes or until they are cooked through.
  6. Meanwhile, put the parsnips, vegetable broth and a pinch of sea salt into a medium saucepan.
  7. Place over medium heat and bring to a boil.
  8. Reduce heat and simmer until the parsnips are soft, about 20 minutes.
  9. Pour the parsnip mixture into a blender. Cover the blender with a clean dish towel and hold that towel tight over the top while you blend until smooth. NOTE: the towel will allow steam to escape so you can prevent the top blowing off and burning you!
  10. In a large bowl, mix together the roasted sweet potatoes, radishes and scallions. Pour in the parsnip dressing and gently stir to combine.
  11. Add the dill, and serve.
  12. Enjoy!

In my mind, the best salads have 5 components: fresh greens, something chewy and substantial, something sweet, something tangy, and something unexpected. This Buckwheat Sweet Potato Arugula Salad has got ’em all!

When I lived in the suburbs for many years, I would go to the supermarket and stock up for the week. I was always a pretty good planner and I would have some idea of what I would need for the whole week and I would make a list and go buy those very things. That kind of planning was a necessity then. I mean, I had kids, a full-time stressful job, a long commute… it was the only way to get it done.

Oh, how things have changed. Now, I live in the very city I used to spend hours commuting to. I have a small kitchen, and, my kids are out of the house. Now, when I go to the market, I like to buy just what I feel like cooking and eating in that moment. Well, plus whatever unnecessary items catch my eye… This feels like such a luxury to me and I love it!

I very rarely crave salad for dinner. I just don’t think most salads are satisfying enough to be a good dinner. But, one day last week, I was craving salad. But I knew that I wanted some of it to be warm. My fav salad of all times is from an Italian restaurant that puts steaming hot veggies on top of ice cold greens… that’s what I wanted. But, I also wanted it to be vegan and to be filling at the same time. Oh, and I didn’t feel like eating too many beans. Wow, I can really be difficult at times…

Let me tell you, rather immodestly at that, that this salad is incredible. It hit all it’s marks. The buckwheat is chewy. The sweet potatoes are warm and sweet. The tempeh tastes like unexpected little pieces of smoky bacon. The spinach and arugula are refreshing.  The cherries are tart. The dressing is tangy. The pecans are crunchy. Okay, enough praises. But you’ve got to make this!

It is true that spinach contains iron, but it’s this vegetable’s lesser-known qualities that really hold my admiration. Spinach contains a substance that helps eliminate prostate cancer. It’s also great for your bones and also for memory loss. Diabetic patients may find that eating spinach helps combat excessive thirst and can even be good for night blindness. Spinach can inhibit the body’s ability to absorb calcium, so calcium-rich foods should be avoided when eating this leafy green.

In Asian medicine, nuts are known to be good for your brain, heart, skin and reproductive system. Almonds are particularly nutritious. They are a good source of protein and they give you energy. And, they are gluten-free. Almonds will help relieve a cough and asthma and are also good for constipation. Pecans are good for energy and they can also help you get rid of a cough. They are also good to help combat constipation, lower back pain, low libido, and erectile dysfunction.

Cherries are one of the best foods to combat many types of arthritis and joint pain. Also, because cherries help improve circulation, they can be helpful for post-stroke patients. In Chinese medicine, we also believe that cherries help to maintain the body’s “essence” or life-force. I always keep a bottle of organic black cherry juice in the fridge and I often drink a few ounces before bedtime or put a little in my smoothies. I also keep bags of frozen cherries in the freezer. And when fresh cherries are in season, you can always find a big bowl in my kitchen. This recipe uses tart dried cherries — I love them and use them as a substitute for raisins in many recipes.

This salad has everything you could ever want. It's filling and tangy and sweet and just so delicious! And it has so many healing ingredients!
Ingredients
  • 1 cup raw buckwheat, cooked according to package directions, then drained and rinsed with cold water (you should end up with about 2 cups of cooked buckwheat), and then immediately tossed with 2 Tbs extra virgin olive oil
  • 1 medium sweet potato (I used a purple one), washed and cut into 1-inch pieces
  • 1 Tbs coconut oil, melted
  • sea salt and black pepper
  • 1-1/2 cups fresh arugula, chopped
  • 1-1/2 cups fresh baby spinach, chopped
  • ⅓ cup pecans, chopped
  • 2 Tbs dried tart cherries
  • 3 oz Facon Bacon tempeh, cut into pieces (or substitute another cooked flavor of tempeh or whatever other meat substitute you like)
  • For the dressing:
  • ¼ cup extra virgin olive oil
  • 2 Tbs balsamic vinegar
  • sea salt and black pepper, to taste
  • 2 tsp Dijon mustard
  • 2 tsp coconut sugar
Instructions
  1. Preheat the oven to 450 degrees.
  2. Line a baking sheet with parchment paper.
  3. Spread the sweet potatoes onto the sheet and toss them with the coconut oil and some salt and pepper.
  4. Roast in the oven for about 20 minutes, or until the sweet potatoes are done.
  5. Meanwhile, make the dressing by whisking all of the ingredients together. Set aside.
  6. In a large bowl, combine the buckwheat, pecans, arugula, spinach, Facon Bacon, and cherries.
  7. Gently stir in the cooked sweet potatoes.
  8. Add as much dressing as you like and gently toss.
  9. Enjoy!

I have a fickle relationship with potatoes. Sometimes I love them and sometimes I hate them. Well, really, I always love the taste of them, but I don’t always love the way my body reacts to them. That being said, when I use really good quality organic potatoes, I’m usually a happy camper. And, in my book, there is nothing better than a good potato salad as a side dish. For everything. And this 4 ingredient vegan potato salad is the easiest side dish ever. And just to sweeten the pot — it stays delicious for many days in the fridge…

My favorite food of all times is french fries smothered in brown gravy. Yes, I really said that out loud. I don’t know why, but it feels kind of cathartic to release that info…

So, when I say sometimes I’m afraid potatoes won’t agree with me, maybe that has something to do with it… hmmmm…

“What makes this potato salad vegan”, you ask? It’s made with an aquafaba-based mayonnaise. Aquafaba is a creamy blend of chickpeas and kombu and it’s awesome (way better than it sounds)! You can buy aquafaba based jars of mayo now in some markets. This condiment is truly the work of a genius.

When I made this 4 ingredient vegan potato salad last week, I served it several times. To several different people. Not even one of them knew it wasn’t made with a full-fat creamy regular mayonnaise. Even better, nobody could tell that I was serving 3-day-old potato salad. I know, it makes you a little scared of receiving a dinner invitation from me, doesn’t it?

Anyway, this recipe couldn’t be easier. It almost seems silly to post the recipe. But, I will.

Here it is the day before Thanksgiving. Eating  light and healthy just seems like the right thing to do. Even more so than usual. It’s like going into survival mode. If I want to eat all that I want to eat tomorrow (and that’s a lot), then I better stick to a smart plan today. This raw corn and vegetable salad is a big part of my perfect plan.

This year, I am not hosting the holiday in my home, so I don’t have as much control over the food as I usually do. If I had my druthers, I’d have a couple of raw dishes on the table, but the likelihood of this happening is next to none… so I did the next best thing and I made a big bowl of this raw corn and vegetable salad today. Yup, it was sashimi for lunch and raw veg salad for dinner. I should have enough room for all of that awesomeness tomorrow…

This is a big delicious bowl of crunchy, fresh tasting, deliciousness.

It’s kind of weird for a salad of mine, but there is no dressing on this salad.

That’s right. None. Just lime juice. And it’s perfect this way… and not just because I want to pig out tomorrow…

This salad has lots of veggies, some fruit (kiwis and pineapple), and lots of fresh herbs. It’s dishes like this that make me think I might be able to be a raw foodist. But, I know that’s not going to happen because I just love hot food. But, this raw corn and vegetable salad is really that good.

Here are just some of the ingredients that are so healing in this raw corn and vegetable salad:

Corn is one of the foods that if I can’t find organic, I just won’t eat because the crops are so heavily sprayed and are full of GMOs. As more people are expressing concern about GMOs, it seems to be getting easier to find good corn at the market. Corn actually benefits the gallbladder, is good for hepatitis, heart disease, and hypertension. Cornsilk is a Chinese herb (Yu Mi Xu). It’s often used to reduce edema, help with hepatitis and reduce the symptoms of some painful urinary conditions. If you can’t find organic fresh corn, buy a bag of organic frozen corn!

Cucumbers are awesome, both for taste and health reasons. In Chinese medicine, they are known to have exceptional healing capabilities. They cool the body, expel toxins, purify the blood, strengthen the heart, moistens the large intestines and the lungs and kill tapeworms. They are good to eat if you have swelling in your hands or feet, or if you have a bladder infection.

Carrots help strengthen the organs in your body. They also are good for the eyes (this is their claim to fame) and they promote healthy digestion. Many moons ago, people used to make carrot tea to ward off measles and to prevent cancer. Carrots help detoxify the body and in today’s world of Chinese medicine, they are prescribed to ease constipation and tonsillitis.

One serving contains 200% of the daily requirements of Vitamin C and 180% of Vitamin A.

Cilantro is also known as Chinese Parsley. It is good for the common cold, indigestion, and energy flow in the body. An old Chinese remedy for the common cold and even for measles was to drink cilantro and mint tea. Cilantro is one of those herbs you either love or hate; I’m a lover…

Basil has anti-viral and anti-bacterial capabilities. It also is good for settling your stomach, and it’s good at lessening the symptoms of the common cold and its accompanying cough. Basil is a spiritual herb — the scent actually calms you; you can boil some in a pot and let the aroma fill the air, you can just leave some around the house, you can toss a bunch in your bath water (I love to do this), or you can use an essential oil with basil to get some great calming effects.

Pineapple is great for your digestion and it can help stop diarrhea. It’s especially good in the summer because it fights against heatstroke.

Hot peppers contain more vitamin C than any other vegetable and they are good at fighting off the common cold. So, if you like spice, as I do, use a generous amount of whatever hot peppers you like. The main component of hot peppers is capsicum. Capsicum actually works with your body and mind to make you feel happy. It’s also good for reducing swelling and can relieve arthritic joint pain. If you have high blood pressure, check with your doctor before eating too many hot peppers because they can actually raise the blood pressure in some people.

  • 2 small (Kirby) cucumbers, finely diced

Thai Salad With Spicy Peanut Dressing

This Thai Salad With Spicy Peanut Dressing contains hemp seeds which, among other things, are great for combatting hot flashes!

Many moons ago, I used to work down by Chinatown. There were so many great Chinese restaurants for lunch but my favorite place to frequent was an awesome (although kind of dirty…) Thai restaurant that was a stone’s throw away from the courthouses. All of us Legal Aid Lawyers used to go there. It was cheap and delicious and close. I remember loving the Thai Salad With Spicy Peanut Dressing. I’ve tried to re-create it a few times and have had okay results but nothing that was as good as I remember being served at that restaurant.

Until now.

I wish I could take the credit for figuring out the awesome flavors in this dressing, but the credit goes to Jessica at jessicagavin.com. I made a few tweaks to the recipe to suit my needs (like adding hemp seeds to combat my hot flashes), but the original recipe is all Jessica’s.

I used kale, cabbage, carrots, herbs, and hemp seeds in the salad. You can use whatever you like. But don’t forget the nuts. I know traditionally this salad is made with chopped peanuts in the dressing, but I used cashews in the salad too… this really is an awesome salad!

Any salad that has a spicy and creamy dressing is pretty good in my book. But this Thai salad with spicy peanut dressing really takes it to another level. Maybe it’s because peanut butter is a real treat for me because I almost never allow myself to eat it. Maybe it’s because sriracha is awesome. I guess it really doesn’t matter why it’s so good… just try it, okay?

Here are some of the healing ingredients in this salad:

Peanuts, contrary to what some believe, are actually good for many things in your body. I don’t often let myself eat them because they sometimes contain mold and it’s really hard to find reasonably priced organic healthy peanuts. But, these popular nuts are great for lessening edema; they act like a diuretic. They can also help you if you have insomnia or if you are breast feeding. An old-time remedy is to made peanut tea and drink it for bed to promote sleep. And, peanut shells used to be used to help with high blood pressure.

Ginger is actually a Chinese herb (Sheng Jiang). It’s especially good during cold weather and also during seasonal changes. So, when winter is trying to turn into spring, and we (those of us on the east coast) get some of those cold, raw, damp days, ginger will make you feel better and will help boost your immune system. Old folklore shows that ginger was rubbed on scalps to stop baldness. And, in some circles, a ginger paste is still rubbed on arthritic joints to stop pain (don’t try this at home unless you are diagnosed with a cold-condition by an acupuncturist).

Garlic is amazing in its antiviral and antibacterial capabilities. Garlic is also a Chinese herb (Da Suan). It’s used to kill toxins and parasites and also to reduce swelling in the body. It’s what I call a great “A” herb: anesthetic, antibacterial, anti fungal, antioxidant, antiviral, etc….

Ingredients
  • For dressing:
  • ⅔ cup peanut butter (preferably organic)
  • juice of 1 large lime
  • 6 Tbs pure maple syrup
  • 2 Tbs white vinegar
  • 3 Tbs liquid aminos
  • 2 tsp toasted sesame oil
  • 2 tsp sriracha
  • 1 tsp chopped fresh ginger
  • 2 garlic cloves, chopped
  • 2 Tbs water
  • For salad:
  • about 3 cups thinly sliced kale leaves
  • red and green cabbage, thinly sliced
  • ⅓ cup fresh mint leaves, roughly chopped
  • ¼ cup fresh cilantro leaves, roughly chopped
  • ¼ cup hemp seeds
  • ¼ cup organic peanuts, chopped
  • ¼ cup raw cashews, chopped

Instructions
  1. Combine all of the dressing ingredients in a blender and whiz until really smooth.

Paleo Vegan Caesar Salad

Even if this wasn’t a paleo vegan Caesar salad, you would still love it more than any other Caesar!

This Caesar salad is better than any Caesar salad you have ever had. Yup. I said it. It’s BETTER. And, it has no dairy. And the croutons are grain-free. And instead of Romaine lettuce, it’s got shaved brussels sprouts and kale. And, I’ll say it again… IT’S BETTER THAN ALL THE OTHER CAESAR SALADS YOU HAVE BEEN EATING! You should believe me (I mean, I almost never write in all caps…)

I wish I could take all of the credit for this awesome dressing, but the credit goes to Angela at Oh She Glows.  She’s amazing and she created the original version of this dressing. Check out her blog if you want a real treat.

When I made this Caesar for friends, I didn’t tell anyone it was paleo or vegan. And I’m not kidding, not one person knew, and a few asked for the recipe. My daughter is a huge Caesar fan — she knows what’s in this recipe (and what’s not) — and this Caesar is her favorite.

The dressing is whipped up in your blender. You can use whatever greens float your boat. You can use whatever croutons you like, but I encourage you to buy some grain-free bread (I actually used grain-free bagels), cube it up, toss it with a little oil, sea salt, black pepper, and garlic powder and toast them in the oven, because, OMG, it’s just amazing (especially with bagel slices). If you are not a strict grain-free eater, go buy some everything bagels and slice those up — that would be awesome!

And, if you take my recommendation and use kale and brussels sprouts, this salad will make for great leftovers in the fridge, because these greens are hearty enough to sit in the dressing without wilting…

Aside from being the best tasting Caesar salad ever, this paleo vegan Caesar salad is also a great healing salad:

Kale is everywhere these days. It is extremely nutritious, and because it to so popular you can find it already washed and prepared in lots of markets. My cheat for this recipe was that I bought this kale already shredded and washed at the market. If you are using a whole bunch of kale, make sure you clean the leaves thoroughly and remove the center thick stems if they bother you (I don’t like to eat these think stems when they are raw). This dark leafy green is a great source of fiber and calcium. It’s also rich in many minerals, including magnesium, iron and potassium. One serving contains 200% of the daily requirements of Vitamin C and 180% of Vitamin A.

Brussels sprouts are from the same cruciferous vegetable family as cabbage, broccoli and kale. They are rich in protein, fiber, antioxidants, vitamins and minerals. They are touted for their aid in weight loss because they have so much fiber and so few calories. Research has shown that these sprouts contain colon-cancer fighting substances and vitamins to protect against Alzheimer’s. Traditionally, they are known as more of a winter vegetable, but many markets now carry them year-round, which makes me happy because I like to eat them year-round!

Cashews are really a multi-tasking nut. I use them all the time so I say it all the time: Cashews have a lower fat content than most other nuts. Most of the fat in cashews is unsaturated and is made up of oleic acid; this is the same acid that is found in olive oil, making these nuts a heart-healty choice. The cashews give this dressing a velvety, creamy texture.

Capers, although small in size, are a big source of anti-oxidants, and they actually can make you feel better emotionally because they activate the “happiness” center of your brain.

Garlic is amazing in its antiviral and antibacterial capabilities. Garlic is actually a Chinese herb (Da Suan). It’s used to kill toxins and parasites and also to reduce swelling in the body. It’s what I call a great “A” herb: anesthetic, antibacterial, anti fungal, antioxidant, antiviral, etc….

This is the best Caesar salad you will ever have. Really. And there's no dairy and the croutons are grain-free. Enough said.
Ingredients
  • For dressing:
  • ½ cup raw cashews
  • ½ cup water
  • 2 Tbs extra-virgin olive oil
  • juice of ½ a lemon
  • ½ tsp garlic powder
  • 1 garlic clove
  • 1 tsp liquid aminos
  • 2 tsp capers
  • sea salt to taste
  • black pepper to taste
  • few drops of hot sauce (or to taste)
  • 1 tsp coconut sugar
  • For salad:
  • one head of kale, sliced into ribbons
  • about 1 lb. Brussels sprouts, thinly sliced
  • a big handful of vegan Parmesan cheese (or Parmesan of your choice)
  • For the croutons:
  • 1 or 2 bagels (I used grain-free ones), cut into small chunks
  • 2 tsp extra-virgin olive oil
  • sea salt and black pepper
  • 1 tsp garlic powder
Instructions
  1. Preheat the oven to 375 °F.
  2. Toss the crouton ingredients together in a medium bowl.
  3. Spread them out on a baking sheet and bake until slightly golden and crisp (mine took about 13 minutes).
  4. Place all of the dressing ingredients into a blender and whiz it up until really smooth (I used my Vitamix, so it was pretty fast)
  5. In a large bowl, toss together kale and Brussels sprouts.
  6. Sprinkle in the Parmesan and toss.
  7. Add the dressing and toss well.
  8. Sprinkle the croutons onto the salad and gently toss again.
  9. Enjoy!
