Borscht With Beef

This Borscht With Beef is a deliciously healing classic soup filled with beets, cabbage, and beef. It’s kind of a cross between a hearty beef stew and a cabbage soup. It is amazing and even non-beet-lovers will ask for a second helping.

I was working with a client a few weeks ago who had really high blood pressure. Now, I’ve always known that beets are great to lower blood pressure but it wasn’t until we actually tested it out that I was truly awe inspired. This wonderful woman came to me willing to do anything she had to in order to feel better. She is my favorite type of client.

I always ask on my initial questionnaire if there is anything you won’t eat. She responded with only two things that she couldn’t                 get down, and one of them was beets.

So, we worked around the beets. And she did amazingly well… her progress was inspiring.

Over the course of a few weeks, I mentioned beets again. I had an intuition or an instinct that beets were the answer to some of her health issues. Well… intuition plus scientific knowledge…

She was game. So I sent her the beets recipe that helped me get my daughter to eat them. And she made it. She ate the beets and she actually loved them. Then she took her blood pressure. The numbers had dropped significantly after only one serving of beets!

She took the bull by the horns and started making more recipes with beets and her blood pressure is now under control. Anyway, this recipe for Borscht With Beef was inspired by this amazing woman who thought she didn’t like beets but loved cabbage soup. It’s delicious. It’s healing. It’s simple. And it tastes like home.

Beets are SO good for you. I try to find ways to fit them into my meals as much as possible. Really… many times a week. Beets nourish blood and tonify the heart. Athletes are starting to drink beet juice as a form of endurance therapy. They are anti-carcinogenic, good for anemia, and relieve constipation. I also think it’s a great idea to eat them raw sometimes because their amazing goodness is even more pumped up this way.

Beef is good for a lot of ailments. It’s good for edema/swelling in the body, it helps many people with their weak back and knees and, believe it or not, it’s good for that bloated, distended feeling we sometimes get in our stomachs. In the olden days, beef was stewed for hours so that the liquid could be sipped to combat chronic diarrhea. I recommend using grass-fed organic ground beef whenever possible.

Bone broth is filled with bone marrow and essential fatty acids — these things promote optimal brain health. It also contains glycine, which is an amino acid that helps with memory, concentration, stress, and focus.  You can make your own bone broth, but you don’t have to anymore. Bone broth is now available in tons of markets. It’s sold in boxes just like chicken or vegetable broth. The glucosamine in bone broth can reduce inflammation and strengthen the bones. It’s also great for your skin, hair, and nails. This is a great thing to use for a quick soup base, or to just sip on during the day. Sometimes I’ll have a hot cup of bone broth first thing in the morning for a quick healing pick me up.

Scallions are one of my favorite ingredients. In Chinese medicine, the root of the scallion is a healing herb (Cong Bai). I always keep scallions on hand in my refrigerator so that I can whip up a batch of cold and flu fighting tea (scallion roots and ginger) the second anyone feels that scratchy throat coming on. It helps the body sweat out toxins. Scallions are antiviral and antibacterial; they are good for the common cold and general nasal congestion — just don’t eat too many if you have a fever. I toss the roots into this soup and let them infuse the liquid.

Cabbage can help control a cough and lessen the symptoms of the common cold — in olden times, cabbage tea was given to people who had contracted the whooping cough. It’s also good to combat constipation and hot flashes.

Carrots help strengthen the organs in your body. They also are good for the eyes (this is their claim to fame) and they promote healthy digestion. Many moons ago, people used to make carrot tea to ward off measles and to prevent cancer. Carrots help detoxify the body and in today’s world of Chinese medicine, they are prescribed to ease constipation and tonsillitis.

Garlic is amazing in its antiviral and antibacterial capabilities. Garlic is actually a Chinese herb (Da Suan). It’s used to kill toxins and parasites and also to reduce swelling in the body. It’s what I call a great “A” herb: anesthetic, antibacterial, anti fungal, antioxidant, antiviral, etc….

This Borscht With Beef is like a delicious cross between cabbage soup and beef stew. It is so healing and so comforting.
Ingredients
  • 2 Tbs extra-virgin olive oil
  • 1 lb beef stew meat
  • sea salt and black pepper
  • 1 bay leaf
  • 6 cups beef bone broth, divided
  • 3 cups water, divided
  • 1 tsp fennel seeds
  • 3 medium/large red beets, peeled and diced
  • 3 scallions, sliced, roots retained and added to the soup
  • ⅓ cup fresh dill, snipped or chopped
  • 3 medium carrots, peeled and diced
  • ¼ cup raw apple cider vinegar
  • ½ medium head savoy cabbage, thinly sliced and broken into shreds
  • 6 garlic cloves, smashed
  • 1 med baking potato, peeled and diced
  • non-dairy yogurt, for topping
Instructions
  1. In a large soup pot set over medium heat, heat the oil.
  2. Season the beef with salt and pepper.
  3. Add the beef to the oil, in a single layer, turning to brown all sides. You will probably have to do this in batches, removing the first batch to a plate to do the second batch.
  4. When the beef is all browned, return all of it to the pot and pour in 3 cups of bone broth and 1 cup of water. Add the fennel seeds. Bring to a boil, then lower the heat to a simmer, cover the pot and cook for 1 hour.
  5. Add the beets, scallions (with the roots), carrots, cabbage, garlic cloves, and potatoes.
  6. Add the remaining 3 cups bone broth and add about 2 more cups of water so that the ingredients are covered with liquid.
  7. Cover and let simmer 30 mins.
  8. Remove from heat and stir in vinegar and dill.
  9. Ladle into bowls and top each serving with a dollop of yogurt.
  10. Enjoy!

I love potatoes of any kind. You can prepare them any way and I will love them. That’s why it’s so important that I make my tubers healthy. I mean, if I’m going to eat the whole bowl, I’d much rather it be a healing dish than a mess of fried or mayonnaise-y potatoes. This healthy sweet potato salad is perfect. It’s delicious and it’s healing… even if you eat more than you should…

Lately, I’ve been swapping out traditional potatoes for sweet potatoes in every recipe that I can. When I was a kid, my favorite thing to order in a diner was french fries with gravy. OMG… just thinking about it makes me both smile and cringe at the same time. The other day when I was at lunch by the beach, I ordered sweet potato fries, rationalizing that this was somehow healthier than ordinary fries. Bahahaha — it’s amazing the rationalizations you can talk yourself into — this was so unhealthy and the second I was done eating, I was sorry I ate it.

So, back to this awesome recipe for healthy sweet potato salad. This is perfect.

And NO MAYONNAISE — the creamy dressing is made with parsnips!!!

And you still feel good after you eat it. It’s got sweet potatoes and dill and some crunchy radishes. Really, it’s clean tasting and creamy at the same time. It’s the perfect side dish for everything you make this summer.

I served this beautiful, colorful salad with fish one night and then on top of a crisp green salad on the second night. Both were just perfect!

These orange gems also help rid your body of excess water, are good for breast health, help people with diabetes and actually can help ease night blindness. In olden times, it was common in China to rub mashed sweet potatoes on poison insect bites to remove the toxins. I haven’t tried this, but if you see me looking a tad orange, this will be why…

Parsnips will help you knock a cold out of your system. So if you have a common cold with headaches, muscle aches, and a stuffy nose, try eating parsnips. They can also help ease arthritic pain.

Dill is considered a chemoprotective in that it can help neutralize some carcinogens. It also helps fight bacteria in the body.

Scallions, as I tell you often, are one of my favorites. In Chinese medicine, the root of the scallion is a healing herb (Cong Bai). I always keep scallions on hand in my refrigerator so that I can whip up a batch of cold and flu fighting tea (scallion roots and ginger) the second anyone feels that scratchy throat coming on. This healthy potato salad is so colorful and so flavorful, you'll love it even more than your favorite mayonnaise-y dish!
Ingredients
  • 1 lb sweet potatoes (I used a mixture of orange, white, and purple ones), unpeeled, cut into ½-in. pieces
  • 1 Tbs extra-virgin olive oil
  • 2 parsnips, peeled, cut into 1-in. pieces
  • 1 cup vegetable broth
  • pinch of sea salt
  • 1 Tbs fresh dill, chopped
  • 2 radishes, sliced
  • 2 scallions, sliced
Instructions
  1. Preheat the oven to 400°F convection setting, or 425°F regular bake setting.
  2. Line a baking sheet with parchment paper.
  3. Toss the potatoes with the oil and spread them out on the baking sheet.
  4. Sprinkle with sea salt.
  5. Roast the potatoes in the oven for about 15 - 20 minutes or until they are cooked through.
  6. Meanwhile, put the parsnips, vegetable broth and a pinch of sea salt into a medium saucepan.
  7. Place over medium heat and bring to a boil.
  8. Reduce heat and simmer until the parsnips are soft, about 20 minutes.
  9. Pour the parsnip mixture into a blender. Cover the blender with a clean dish towel and hold that towel tight over the top while you blend until smooth. NOTE: the towel will allow steam to escape so you can prevent the top blowing off and burning you!
  10. In a large bowl, mix together the roasted sweet potatoes, radishes and scallions. Pour in the parsnip dressing and gently stir to combine.
  11. Add the dill, and serve.
  12. Enjoy!

Simple Poached Salmon With Yogurt Sauce

I don’t think I’ve poached salmon since I was in cooking school. I don’t really know why I don’t do it more often though, because this salmon is awesome. It’s perfect if you are serving a crowd and it’s an easy dish to make ahead and serve cold or at room temperature. This simple poached salmon with yogurt sauce really is just that: simple.

What’s better than a dish that is made for leftovers? The salmon that’s leftover here makes the best cold salmon salad. And it makes a terrific filling for omelets. Oh, and topping a salad with some big chunks of this moist salmon and then using the yogurt sauce as a dressing… well, just… yum!

I made this a few weeks ago when I was asked to bring a main course to a family gathering. Honestly, I usually use those kinds of opportunities to experiment with new recipes (which some people are happy about and some people are just plain scared about), but on this particular day, I just didn’t feel like cooking. And I’ve learned the hard way that if I don’t feel like cooking but I cook anyway, any first-time-experimental-recipe invariably comes out pretty bad. So, I figured I’d do something simple. Something mainstream. Something everyone would love, and nobody would be fearful of.

Oh, did I mention that I used my leftover simple poached salmon with yogurt sauce to make tacos the next day…?

And, the yogurt sauce is non-dairy!

I tell a lot of my clients to add wild salmon to their diet to increase their athletic performance — this fish can help reduce aches and pains in your muscles and joints, and it’s a good source of iron.

In Asian medicine, we use coconut to strengthen the body, reduce swelling, and stop bleeding. Coconut kills viruses, bacteria, and parasites. It’s good for all types of infections and viruses in the body, including the flu, bronchitis, tapeworms, urinary tract infections, and herpes. And perhaps most importantly, it helps you keep your mind sharp and it makes it easier for you to focus. I used a full-fat coconut yogurt for the sauce to accompany this salmon.

This is a classic recipe. Anyone you serve it to will love it and the leftovers make awesome tacos...
Ingredients
  • 4 lb salmon fillet, cut in half
  • ¼ cup white vinegar
  • 4 scallions, cut into 3 or 4 pieces (leave the roots on)
  • 1 lemon, cut in half
  • 2 carrots, cut into thick slices
  • 1 tsp sea salt
  • 10 grinds black pepper
  • For the sauce:
  • 1 cup full-fat plain coconut yogurt
  • ⅓ cup healthy mayonnaise (I used Fabannaise)
  • ¼ cup chopped fresh dill
  • sea salt and black pepper, to taste
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
Instructions
  1. Place the salmon in a large pot and cover it will water.
  2. Add the vinegar and scallions to the pot.
  3. Squeeze the lemon halves into the pot and then toss in the lemons halves themselves.
  4. Add salt and pepper.
  5. Bring to a boil, then immediately reduce the heat to a low simmer.
  6. Simmer about 10 minutes, or just until the salmon is cooked (if you start to see the white fat congealing on the fish, it's a bit past done... so watch carefully)
  7. Using two large spatulas, carefully remove the fish to a platter. You can throw away the lemons and scallions, but if you like carrots, serve them strewn around the salmon.
  8. Make the sauce: Stir together all ingredients.
  9. Break up the salmon a bit on the platter and serve with the sauce.

I have a fickle relationship with potatoes. Sometimes I love them and sometimes I hate them. Well, really, I always love the taste of them, but I don’t always love the way my body reacts to them. That being said, when I use really good quality organic potatoes, I’m usually a happy camper. And, in my book, there is nothing better than a good potato salad as a side dish. For everything. And this 4 ingredient vegan potato salad is the easiest side dish ever. And just to sweeten the pot — it stays delicious for many days in the fridge…

My favorite food of all times is french fries smothered in brown gravy. Yes, I really said that out loud. I don’t know why, but it feels kind of cathartic to release that info…

So, when I say sometimes I’m afraid potatoes won’t agree with me, maybe that has something to do with it… hmmmm…

“What makes this potato salad vegan”, you ask? It’s made with an aquafaba-based mayonnaise. Aquafaba is a creamy blend of chickpeas and kombu and it’s awesome (way better than it sounds)! You can buy aquafaba based jars of mayo now in some markets. This condiment is truly the work of a genius.

When I made this 4 ingredient vegan potato salad last week, I served it several times. To several different people. Not even one of them knew it wasn’t made with a full-fat creamy regular mayonnaise. Even better, nobody could tell that I was serving 3-day-old potato salad. I know, it makes you a little scared of receiving a dinner invitation from me, doesn’t it?

Anyway, this recipe couldn’t be easier. It almost seems silly to post the recipe. But, I will.

(I know I’ve told you this before, but it really is awesome!) Onion is a superhero in the food world!

Chickpeas actually help calm the spirit. They relieve anxiety and soothe irritability… it kind of makes you realize why hummus is so popular… The mayonnaise I love for this recipe is made from aquafaba (chickpeas).

Sea salt contains magnesium, calcium, potassium, zinc, iron, and iodine — all minerals that are necessary for a healthy body. Himalayan sea salt is good for your bones, sleep, libido, muscles, and heart. Be aware, sea salt is not the same thing as traditional table salt…

This is the easiest, most delicious side dish ever! You need to make this... and it keeps well in the refrigerator for days!
Ingredients
  • 1-1/2 lb small red potatoes, unpeeled, quartered or cut into 1-inch pieces if potatoes are large
  • ½ of a red onion, minced
  • 3- to 4- Tbs vegan mayonnaise (I used this one)
  • ½ tsp dried dill or 2 tsp fresh dill, minced
  • sea salt, to taste
Instructions
  1. Boil the potatoes just until they are tender; do not overcook them!
  2. Drain and rinse under cold water.
  3. In a large bowl, gently toss the potatoes with the onion, mayonnaise, dill, and salt.
  4. Serve alongside everything and enjoy!

Everyone always assumes that I grew up in a foodie home. Ummmmmm… not so much. I can’t even begin to tell you the amount of frozen food I ate as a child. I remember frozen chicken pot pies. The ones that were tiny little frozen rocks with a thick crust and a gummy filling. As a kid, I think I must have thought they were good. But as an adult, I can’t even imagine eating one now. But a good pot pie… well, that’s a great thing. Enter this amazing paleo chicken pot pie soup.

I found the original recipe for this soup on a great blog called My Heart Beets. It’s a great recipe. I changed it up just a bit to make it a little more healing for Steve, who has a really obnoxious cold and cough that just keeps hanging on. But Ashley did an awesome job with this genius recipe.

We were on vacation in Mexico last week and it was so warm and beautiful. When we came home all I wanted was anti-Mexican food. I never thought I could have too much guacamole and too many margaritas, but it happened. So, this paleo chicken pot pie soup was just perfect!

This soup is creamy (but there’s no dairy) and rich and garlicky and healing. It’s just so comforting. And, it’s nothing like those frozen brick-like pot pies from my childhood.

This recipe is also super easy because it’s made with a rotisserie chicken. So, no excuses… come on, you’ve got to try it…

Celery actually helps stop bleeding — so if you or anyone you know has just had surgery, start adding celery to your dishes! Celery is also great to help lower blood pressure and it’s been known to help with insomnia.

  • 1 rotisserie chicken, skinned and shredded (preferably organic)
  • 1 medium onion, chopped
  • 8 garlic cloves, chopped
  • 2 Tbs grass-fed butter or ghee
  • sea salt and black pepper
  • 2 lb yellow potatoes (half of them peeled and roughly chopped; the other half cut into bite-size pieces)
  • 2 cups chicken broth (I used bone broth)
  • 3 large carrots, peeled and sliced
  • 2 celery ribs, chopped
  • 3 scallions, sliced
  • 2 tsp fresh thyme leaves
  • 1 tsp fresh sage, chopped
  • 1 tsp dried dill (use fresh if you have it)
Instructions
  1. Heat the butter in a large soup pot. Add the onions and garlic and cook, stirring, 3 minutes.
  2. Add the peeled, roughly chopped potatoes and the broth.
  3. Season with salt and pepper.
  4. Simmer, covered, about 15 minutes, or until the potatoes are tender.
  5. Using a slotted spoon, transfer the potatoes and onions to a blender and set aside to cool slightly.
  6. Whiz them up until nice and creamy.
  7. Add the carrots and celery to the broth in the pot.
  8. Add the bite-sized potatoes.
  9. Add the contents of the blender.
  10. Simmer, covered, about 10 minutes, or until the potatoes are tender.
  11. Add the chicken, scallions, and herbs and cook another 5 minutes.
  12. Ladle into bowls.
  13. Enjoy!

I make some form of a healing soup every time anyone says they feel they might be getting sick. So, last week when Steve was past the point of “almost” getting sick — I mean way into the multi-tissue phase of a cold, I brought out the big guns and made this healing slow cooker chicken soup.

Usually when I make chicken soup, I let it simmer on the stove and go about my business. This time, I just didn’t have the time to stay in, so I broke out the slow cooker. And let me tell you, not only is this soup delicious, but this healing slow cooker chicken soup really lives up to its name! Steve had a bowl that night for dinner, then another for breakfast (this surprised me because, although I would easily do this, I was shocked that he actually ate soup for breakfast), and then again for dinner. This stuff really is better than any cold medicine you can buy.

I like to use bone broth instead of traditional stock or broth whenever I make my soups. This really amps up the healing benefits. Read my article on the 5 Reasons You Need To Add Bone Broth To Your Diet. This info will turn you into a bone broth fanatic too!

This is not you mother’s chicken soup. The broth is filled with garlic and ginger and scallions — a whole arsenal of germ and bacteria fighting warriors! I used lots of veggies (I even substituted turnips for potatoes), kicked it up with some Chinese herbs, and made it paleo-friendly by using zucchini noodles instead of traditional pasta.

Here are some of the amazing things this soup does:

Chicken is something I push people to buy organic if possible. Organic chicken is a great, healthy protein to give you energy, lessen the pain of some types of arthritis, and boost your system when you are particularly weak — like after surgery or childbirth. People who have some conditions that we consider “excess heat” conditions should limit the amount of chicken they eat. So, if you have an illness that gives you a bright red tongue or severe dryness in your body, check with your doctor first. For example, if you have a lot of burning stomach acid, you should avoid chicken for awhile…

Bone broth is filled with bone marrow and essential fatty acids — these things promote optimal brain health. It also contains glycine, which is an amino acid that helps with memory, concentration, stress, and focus.  You can make your own bone broth, but you don’t have to anymore. Bone broth is now available in tons of markets. It’s sold in boxes just like chicken or vegetable broth. The glucosamine in bone broth can reduce inflammation and strengthen the bones. It’s also great for your skin, hair, and nails. This is a great thing to use for a quick soup base, or to just sip on during the day. Sometimes I’ll have a hot cup of bone broth first thing in the morning for a quick healing pick me up.

Garlic is amazing in its antiviral and antibacterial capabilities. Garlic is actually a Chinese herb (Da Suan). It’s used to kill toxins and parasites and also to reduce swelling in the body. It’s what I call a great “A” herb: anesthetic, antibacterial, anti fungal, antioxidant, antiviral, etc….

Scallions, as I tell you often, are one of my favorites. In Chinese medicine, the root of the scallion is a healing herb (Cong Bai). I always keep scallions on hand in my refrigerator so that I can whip up a batch of cold and flu fighting tea (scallion roots and ginger) the second anyone feels that scratchy throat coming on. It helps the body sweat out toxins. Scallions are antiviral and antibacterial; they are good for the common cold and general nasal congestion — just don’t eat too many if you have a fever.

GingerChinese herb (Sheng Jiang). It’s especially good during cold weather and also during seasonal changes. So, when winter is trying to turn into spring, and we (those of us on the east coast) get some of those cold, raw, damp days, ginger will make you feel better and will help boost your immune system. Old folklore shows that ginger was rubbed on scalps to stop baldness. And, in some circles, a ginger paste is still rubbed on arthritic joints to stop pain (don’t try this at home unless you are diagnosed with a cold-condition by an acupuncturist).

Turnips are great for indigestion. They help relieve that horrible bloated feeling we all get sometimes and they reduce excess gas and diarrhea. Research shows that turnips contain a substance that may reduce your risk of colon, prostate, and lung cancer. These bulbous vegetables contain a good amount of vitamins B and C and they provide calcium and potassium, and they can help your cough. In Chinese medicine turnips (wu jing) are known to help reduce inflammation and phlegm.

Dill is considered a chemoprotective herb that can help neutralize some carcinogens and it’s also an antibacterial herb.

Zucchini cools your body off and makes you feel better during those hot days of summer. It helps your body release excess heat and it will make your mind feel more calm.

This soup really lives up to its name. Make a pot of this when you are feeling sick and let the healing begin! It's filled with garlic, ginger, scallions and other healing ingredients.
Ingredients
  • 2-1/2 lb. bone-in, organic chicken thighs (about 6 thighs)
  • 1 qt chicken bone broth
  • 2 cups water
  • 2 medium onions, diced
  • 2 turnips, peeled and diced
  • 3 celery stalks, sliced
  • 3 carrots, peeled and sliced into thick slices
  • 3 large (or 6 smaller) garlic cloves, smashed
  • 5 slices of peeled ginger (about ¼-inch thick)
  • 3 scallions, sliced (add the roots of the scallions too)
  • 1 Tbs fresh dill, chopped (use more if you like)
  • sea salt and black pepper to taste
  • 2 cups zucchini noodles (use a spiralizer or a vegetable peeler, or buy them pre- "zoodled")
Instructions
  1. Add all ingredients, except zucchini, to the slow cooker.
  2. Cook on high heat for 4 hours.
  3. Remove the chicken to a plate and remove the meat from the bones.
  4. Discard the bones and add the chicken back into the soup.
  5. Add zucchini and cook for another 30 minutes.
  6. Ladle into bowls and let the healing begin.
  7. Enjoy!

I love to entertain. The whole process de-stresses me. I’m not one of those people who sits around ruminating about what to serve and how to present it and how to time everything just right. I just kind of wing it. Easy entertaining is one of the things people ask me about all of the time. Well, this dip is for all of you who want a great easy entertaining recipe to serve your guests while you are getting dinner ready.

This recipe is like a “food hack”. What I mean by that is that it easily takes a store-bought ingredient and turns it into something super awesome. I mean really, really awesome. So-good-that-everyone-will-be-asking-you-for-the-recipe awesome.

The base of this vegetable hummus dip recipe is store-bought hummus. Add then we add a bunch of stuff to it. And we make it pretty. And we spice it up.  And serve it with beautiful crunchy vegetables for dipping. And amazing sprouted grain crackers. And it’s truly incredible.

I saw a version of this dip on one of my favorite blogs (Minimalist Baker) and I took some creative license and made it suit my needs. My guests loved it and I’ve made different versions of it many times since (even when I didn’t have any guests)… it’s really that good. I really feel like I’m spoiling myself when I make this just for my family.

Chickpeas actually help calm the spirit. They relieve anxiety and soothe irritability… it kind of makes you realize why hummus is so popular…

Turmeric is a Chinese herb (Jiang Huang). It is great for reducing inflammation throughout the body. If you suffer from aches and pains in your joints, try turmeric. It can help relieve menstrual pain and some other abdominal pains but, if you are pregnant, ask your doctor before you eat too much turmeric.

Sesame seeds have many great nutritional benefits. They are an anti-aging food. If you have backaches, hair thats graying way too fast, ringing in the ears, weak knees, blurry vision or general weakness, go for the sesame seeds; just sprinkle them on everything. Long ago in China, sesame seeds were ground into honey to form a paste and was taken as a medicine to counter old-age and weakness. Black sesame seeds are a Chinese herb (Hei Zhi Ma). Black foods, in Chinese medicine, are knows as longevity foods. This recipe uses tahini sauce, which is a paste made from sesame seeds and oil (I buy this read-made in a can or a jar).

Parsley has been shown to reduce tumors in the lungs and to neutralize the effects of carcinogens, including cigarette smoke. It is high in vitamins A and C, and is good for your heart. This herb is also a natural breath freshener. So, if you have a chance to use more than a few sprigs as a garnish, go for it.

This is the perfect easy-entertaining dip. It takes store-bought hummus to amazing new heights. And it's healing and delicious and so pretty...
Ingredients
  • 1 15-oz can chickpeas, rinsed and drained
  • 1 Tbs extra-virgin olive oil, plus 1-tsp for the veg salad topping
  • 1 tsp coconut sugar
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ¾ tsp turmeric
  • ½ tsp oregano
  • ½ tsp sea salt
  • 10 grinds of black pepper
  • 1 cup store-bought hummus
  • ¼ cup tahini
  • juice of ½ a lemon, plus a bit extra for the veg salad topping
  • ¼ cup unsweetened almond milk
  • 2 tsp minced fresh dill
  • 2 large garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • 20 grape tomatoes, cut in half
  • 1 scallion, sliced
  • hot sauce, for garnish (optional)
Instructions
  1. Preheat oven to 375 degrees.
  2. Combine the chickpeas in a small bowl with the oil, coconut sugar, smoked paprika, cumin, turmeric, oregano, salt, and pepper.
  3. Spread them out on a baking sheet lined with parchment paper.
  4. Roast in the oven until the chickpeas are beginning to brown and get a bit crispy (mine took about 35 minutes).
  5. Meanwhile, make the sauce: stir together the tahini, lemon juice, almond milk, dill, and garlic. Set aside.
  6. Make the salad for the top: In a small bowl, combine the parsley, tomatoes, scallion, 1-tsp of olive oil and a quick squeeze of lemon juice.
  7. Spread the hummus on a serving platter.
  8. Top with the tahini sauce mixture and the vegetable salad.
  9. Garnish with a bit of hot sauce if you like.
  10. Serve with crackers and/or fresh vegetables to dip.

Slow Roasted Salmon With Smoked Salmon Rollups

Salmon helps fight illnesses… and this slow roasted salmon with smoked salmon rollups is a double dose of salmon!

This is truly a simple recipe. It only looks a little fancy because when I was done with my go-to simple slow roasted salmon, I rolled up some smoked salmon and put it on top. One of my favorite sushi rolls at our local Japanese restaurant is a fresh salmon roll with smoked salmon inside. So, when I opened my fridge and I saw a package of smoked salmon, the lightbulb went on over my head…. hmmmm….. this has got to be good…. And, it really is!

My son just graduated from college and is back in New York with us, which makes me very happy. Ever since he was a child, I have made sure to always have a package of smoked salmon in the fridge for him. It’s no different now, even though he’s all grown up. So, we ate his lox and it was awesome paired with this juicy slow-roasted salmon. Now, slow roasted salmon with smoked salmon rollups will be a staple in my kitchen, even if it does mean there may not be any left for him…

Even if you don’t want to use the smoked salmon, trust me when I tell you that the method in this recipe is the way you should always cook your salmon. It keeps the fish moist and flavorful; you can’t get it better in any restaurant. Trust me on this…

This salmon is slow-roasted with lemon and dill and then topped with smoked salmon slices -- two delicious salmons in one dish... so easy... so delicious.... so healthy.
Ingredients
  • 1 lb salmon fillet
  • sea salt and black pepper
  • 1 cup fresh dill (use the whole fronds; no need to chop)
  • 1 lemon, sliced
  • 2 tsp extra-virgin olive oil
  • 3 oz smoked salmon, thinly sliced and rolled up
Instructions
  1. Preheat the oven to 200°F.
  2. Line a baking sheet with parchment paper and place the fish, skin-side-down, on the paper.
  3. Season the fish with salt and pepper.
  4. Arrange the lemon slices and dill on top of the salmon.
  5. Drizzle the oil on top.
  6. Roast until the salmon is still a bit rare in the center, about 30 minutes.
  7. Cut the fish into serving portions and top with the smoked salmon rollups.
  8. Enjoy!
