Simple Poached Salmon With Yogurt Sauce

This simple poached salmon with yogurt sauce will keep you healthy inside and out…

I don’t think I’ve poached salmon since I was in cooking school. I don’t really know why I don’t do it more often though, because this salmon is awesome. It’s perfect if you are serving a crowd and it’s an easy dish to make ahead and serve cold or at room temperature. This simple poached salmon with yogurt sauce really is just that: simple.

What’s better than a dish that is made for leftovers? The salmon that’s leftover here makes the best cold salmon salad. And it makes a terrific filling for omelets. Oh, and topping a salad with some big chunks of this moist salmon and then using the yogurt sauce as a dressing… well, just… yum!

I made this a few weeks ago when I was asked to bring a main course to a …

Buckwheat Sweet Potato Arugula Salad

Sweet potatoes are great for your digestive system!

In my mind, the best salads have 5 components: fresh greens, something chewy and substantial, something sweet, something tangy, and something unexpected. This Buckwheat Sweet Potato Arugula Salad has got ’em all!

When I lived in the suburbs for many years, I would go to the supermarket and stock up for the week. I was always a pretty good planner and I would have some idea of what I would need for the whole week and I would make a list and go buy those very things. That kind of planning was a necessity then. I mean, I had kids, a full-time stressful job, a long commute… it was the only way to get it done.

Oh, how things have changed. Now, I live in the very city I used to spend hours commuting to. I have a small kitchen, and, my …

Roasted Turmeric Cod

Cod is good for your heart and low in calories!

This recipe is idiot-proof. This is perfect for me because, even though I’m a chef, I love to make easy recipes. I learned many moons ago that I am incapable of having a glass of wine while I’m cooking because, well, everything just goes wrong — I forget ingredients, I burn things, you name in and it will go wrong if I have wine while I’m cooking. But, this roasted turmeric cod recipe is easy enough that I can have my wine and cook fish too!

I’m making myself sound like a lush, but in truth I’m quite a lightweight. But you know how it is, when you really have a taste for something…

So, last week when I wanted fish AND I wanted wine, this was the answer. And, not only is it simple, but it’s deliciously awesome. And …

Cauliflower Chickpea Soup

Chickpeas can soothe irritability and boost your mood!

This is one of my most-requested soup recipes (especially from my daughter — it’s her favorite). I first published this cauliflower chickpea soup recipe many years ago when I first started blogging. In fact, this soup is one of the reasons I started blogging — so many people wanted this recipe, that I figured I would post it on-line… and the rest is history.

Now, years later, my daughter came to visit this week and it still put a big smile on her face when she called me on her way here and said she was hungry and I was able to tell her that this soup was waiting for her. You just gotta love a kid who can be made happy by the little things in life…   It makes me especially happy that she loves food and I love to cook!…

Slow Cooker Dairy-Free Grain-Free Vegan Enchiladas

These slow cooker dairy-free grain-free vegan enchiladas are so simple and delicious…

I love anything in a wrap of any kind. I don’t know what it is, but things just taste better when they are rolled up. But when I started eating paleo, I sadly left my wraps behind. And I’ve so missed my burritos, tuna wraps, enchiladas, quesadillas… all of that great awesome “wrap-y” food. Enter… almond flour wraps. Yup, it’s these babies that allowed me to make this amazing recipe for slow cooker paleo vegan enchiladas…

If you are like me and find that your body just looks and feels better without any grains in your diet, you can make this recipe and do the happy dance. Yay! Wraps that can be cooked and that are grain free — this is the greatest invention since sliced bread…

I made these on Monday, so I did a really big …

Raw Corn And Vegetable Salad

This raw corn and vegetable salad is a great way to incorporate more raw foods into your diet…

Here it is the day before Thanksgiving. Eating  light and healthy just seems like the right thing to do. Even more so than usual. It’s like going into survival mode. If I want to eat all that I want to eat tomorrow (and that’s a lot), then I better stick to a smart plan today. This raw corn and vegetable salad is a big part of my perfect plan.

This year, I am not hosting the holiday in my home, so I don’t have as much control over the food as I usually do. If I had my druthers, I’d have a couple of raw dishes on the table, but the likelihood of this happening is next to none… so I did the next best thing and I made a big …

Salt And Pepper Roasted Green Beans

These salt and pepper roasted green beans are a deliciously simple way to improve your digestion…

Sea salt is awesome. I don’t think it’s on the official superfoods list, but it should be. Did you know that if you don’t have enough salt, your body gets dehydrated? And if you are getting the right amount of salt, then your energy levels will improve. So, try these salt and pepper roasted green beans… they are a quick, delicious fix!

I’ve learned to put a big pinch of sea salt into my water in the morning. I’ve been doing this for years and now I’m seeing that this salted water is becoming an “in” thing. Maybe that’s because sea salt contains some really great minerals (think magnesium, calcium, potassium, zinc, iron, and iodine).

Now, don’t start telling people that I said salt is awesome. I said SEA salt is awesome. Don’t go …

Vegan Beet & Butternut Squash Chili

This Vegan Beet & Butternut Squash Chili has big chunks of beets in it. Beets are great for nourishing your blood (that’s not a vampire reference…) — I find that they are awesome for fighting off some of those annoying conditions associated with menopause!

It’s chili season! Nothing says happy autumn like the fragrant aroma from a big pot of chili cooking on the stove. In our house that chili must be eaten while watching whatever football game is on TV. And the table has to be filled with bowls of guacamole, cheeses (vegan ones too), coconut yogurt, fresh cilantro, and some healthy-ish chips to pile on top of the individual bowls of chili. And even though this is a healthier chili, it still goes great with an ice cold beer…

Oftentimes I make my chili with meat — beef, pork, turkey, bison, lamb… whatever I’m feeling at the moment. …

Bulletproof Coffee Sweetened With Dates

Bulletproof coffee sweetened with dates may be just the thing you need to start your day…

Full disclosure: I am not a coffee drinker. Well, I am not a caffeinated coffee drinker. When I was in college (a lifetime ago), I remember drinking 6 cups of coffee a day. But since I discovered that caffeine is something I don’t tolerate well (or, really, at all…), I stopped cold turkey. But I’ve always loved the taste and the smell of coffee so when I want a treat, I’ll grab a good cup of decaf.

A few years ago, when I first learned about Bulletproof Coffee from the amazingly knowledgeable Dave Asprey, all I wanted to do was try it. I started making it for Steve and for others who could actually tolerate caffeine and I found people were really reaping some great benefits.

I kept hearing about increases in energy, …

Paleo Vegan Caesar Salad

Even if this wasn’t a paleo vegan Caesar salad, you would still love it more than any other Caesar!

This Caesar salad is better than any Caesar salad you have ever had. Yup. I said it. It’s BETTER. And, it has no dairy. And the croutons are grain-free. And instead of Romaine lettuce, it’s got shaved brussels sprouts and kale. And, I’ll say it again… IT’S BETTER THAN ALL THE OTHER CAESAR SALADS YOU HAVE BEEN EATING! You should believe me (I mean, I almost never write in all caps…)

I wish I could take all of the credit for this awesome dressing, but the credit goes to Angela at Oh She Glows.  She’s amazing and she created the original version of this dressing. Check out her blog if you want a real treat.

When I made this Caesar for friends, I didn’t tell anyone it was paleo or …
