Zoodles With Raw Tomato Basil Sauce

These zoodles with raw tomato basil sauce can actually help calm your mind…

Honesty time. I don’t love zucchini noodles. I really want to, but I just don’t. I know everyone, everywhere, is saying that noodles are a great substitute for spaghetti. Yeah, right. Not so much for me. BUT, they are so good for you — especially these zoodles with raw tomato basil sauce — that I made it my mission to figure out why I don’t love noodles as much as everyone else seems to.

This is what I figured out: I just don’t love them when I think of them as spaghetti. When I’m expecting a big heaping bowl of satisfying pasta, any kind of vegetable, no matter how good it is, just isn’t going to cut it. So, here’s my trick. I serve them with a cold sauce (and this one is delicious), so that it …

4 Ingredient Vegan Potato Salad

Potatoes can actually be great for your digestion…

I have a fickle relationship with potatoes. Sometimes I love them and sometimes I hate them. Well, really, I always love the taste of them, but I don’t always love the way my body reacts to them. That being said, when I use really good quality organic potatoes, I’m usually a happy camper. And, in my book, there is nothing better than a good potato salad as a side dish. For everything. And this 4 ingredient vegan potato salad is the easiest side dish ever. And just to sweeten the pot — it stays delicious for many days in the fridge…

My favorite food of all times is french fries smothered in brown gravy. Yes, I really said that out loud. I don’t know why, but it feels kind of cathartic to release that info…

So, when I say sometimes I’m afraid …

Cauliflower Chickpea Soup

Chickpeas can soothe irritability and boost your mood!

This is one of my most-requested soup recipes (especially from my daughter — it’s her favorite). I first published this cauliflower chickpea soup recipe many years ago when I first started blogging. In fact, this soup is one of the reasons I started blogging — so many people wanted this recipe, that I figured I would post it on-line… and the rest is history.

Now, years later, my daughter came to visit this week and it still put a big smile on her face when she called me on her way here and said she was hungry and I was able to tell her that this soup was waiting for her. You just gotta love a kid who can be made happy by the little things in life…   It makes me especially happy that she loves food and I love to cook!…

Broccoli Pizza Crust

Did you know that  eating broccoli can make you feel less irritable…?

Pizza can be a girl’s best friend. Yes, I said it. And I meant it. And no, you won’t be the first non-believer. If I had a nickel for every person who thinks I can’t make my favorite comfort foods both delicious and healthy, I’d be rich. It’s true that I try not to eat grains, and I don’t eat cheese. But, it is also awesome-ly true that I make the best healthy pizza around. So, for all of my friends out there who are working with me to get your-over-40-amazing-selves energized and healthy… this broccoli pizza crust recipe is for you.

There’s nothing sexier than a woman eating pizza. Except maybe if she’s slurping up a big bowl of spaghetti…

I mean, who doesn’t love a woman who can eat?

Eating a salad just doesn’t have the …

Pineapple Protein Smoothie Bowl

The first time I made this pineapple protein smoothie bowl it was a bright summer day.  Ah, I remember it well — shining sun, warm breeze, still daylight when it was time for dinner…  Today, it’s much different.  It’s cold and dreary. And raining. And it’s dark at 4:30. And everyone around me has a cold and a sore throat. I mean, there are tissues everywhere… yuk.

So, I did what I love to do — try to make everything and everyone better with food. That means making dishes with turmeric and ginger and some of my awesome Chinese and Ayurvedic supplements.  But honestly, I was starting to have a hard time making the sickies eat so much soup.  I figured if I went in the opposite direction, maybe it would work.  I took my original recipe for this smoothie bowl and I added some magic.

And, by magic I …

Szechuan Zoodles

This recipe will actually make you feel cooler and calmer…

It’s holiday season, but in my book that doesn’t mean everything we eat has to be heavy and traditional. This dish is neither, but it’s awesome. When I brought a big bowl of these Szechuan Zoodles to my family’s Hanukkah party, they certainly looked non-traditional next to the latkes but they made everyone happy. I’m all for healthy and happy, so if I were you, I’d give this dish a shot at your holiday party!

I saw this recipe on one of my favorite food blogs, Half Baked Harvest and the beautiful pics kind of called to me, so I knew I was going to have to make some version of them!

I’ve made zoodle dishes before and some have them have been great, while some have been only so-so. While I do love these vegetable noodles, I am a …

Paleo Turkey Meatballs

Did you know that turkey can boost your energy…

I’m of the belief that any meatball is a good meatball. It’s kind of like any pizza is a good pizza. There’s just something about food in the form of a bite-size round ball that makes it taste awesome. But, not every ball is a healthy ball. And if you are a paleo eater, it’s sometimes hard to find a meatball with great taste and great texture. Enter… these paleo turkey meatballs.

Im my house, meatballs are not reserved just for a plate of pasta. Although, I do love my grain-free pasta… But, my absolute fav way to eat them is atop a huge bowl of steaming veggies. My current obsession is a bowl of garlicky broccoli rabe topped with meatballs. I think I just drooled a little bit onto my computer as I’m typing.

Usually I like my balls with …

Vegan Beet & Butternut Squash Chili

This Vegan Beet & Butternut Squash Chili has big chunks of beets in it. Beets are great for nourishing your blood (that’s not a vampire reference…) — I find that they are awesome for fighting off some of those annoying conditions associated with menopause!

It’s chili season! Nothing says happy autumn like the fragrant aroma from a big pot of chili cooking on the stove. In our house that chili must be eaten while watching whatever football game is on TV. And the table has to be filled with bowls of guacamole, cheeses (vegan ones too), coconut yogurt, fresh cilantro, and some healthy-ish chips to pile on top of the individual bowls of chili. And even though this is a healthier chili, it still goes great with an ice cold beer…

Oftentimes I make my chili with meat — beef, pork, turkey, bison, lamb… whatever I’m feeling at the moment. …

Healing Slow Cooker Chicken Soup

I make some form of a healing soup every time anyone says they feel they might be getting sick. So, last week when Steve was past the point of “almost” getting sick — I mean way into the multi-tissue phase of a cold, I brought out the big guns and made this healing slow cooker chicken soup.

Usually when I make chicken soup, I let it simmer on the stove and go about my business. This time, I just didn’t have the time to stay in, so I broke out the slow cooker. And let me tell you, not only is this soup delicious, but this healing slow cooker chicken soup really lives up to its name! Steve had a bowl that night for dinner, then another for breakfast (this surprised me because, although I would easily do this, I was shocked that he actually ate soup for breakfast), and …
