I love all meatballs. For some reason, anything that can be made into a ball just tastes good to me. I remember when my kids were young, I would get them to eat foods by making them bitesize and sticking a toothpick into each one so they could easily grab whatever it was. I love going to the farmers’ market. I’d rather do that that almost anything else. There’s just something about all of the smells and colors and people, especially during autumn that makes me happy… it feels like home. Last weekend, when I was walking through all of the beautiful stalls filled with vegetables, the vendor with the beans caught my eye. There were just so many different types and colors, so I had to buy some. It was a hard choice, but I chose the most beautiful, huge, flat beans I had ever seen. I didn’t know at the time, that they would become the root of this deliciously homey pot of flat beans and potatoes.

Grain Free Banana Bread

The other day I was on a hunt for grain-free, unsweetened desserts. I know, sounds pretty unappetizing. That’s why I needed to hunt. When I came across this recipe for grain free banana bread, my expectations were fairly low. But, I must give kudos to Michele at Paleo Running Mamma because that’s where I found the original recipe, and it’s genius.

I’ve made grain free cakes and breads before and more often than not, they don’t rise enough or they are really dense. But not this recipe. This grain free banana bread is delicious. And it rose. And it turned golden on the outside. And it tastes unbelievable — it’s sweet with no added sweeteners.

Sheet Pan dinners are all the rage. They are like last year’s kale recipes. Remember when every recipe seemed to have kale in it? Everything has it’s time, and for one pan, oven-baked dinners, that time is now. And nobody is happier than I am! I mean, really, what’s better than putting everything on a single tray, plopping it in the oven, and ending up with a flavorful, well-seasoned, spiced-up, healthy dinner? Nothing.
