7 reasons why you should be eating more tomatoes

I love tomatoes. I love them raw. I love them cooked. I love them fresh. I love them canned. I love them in cold gazpacho and in hot creamy tomato soup. Okay, you get the picture…

Tomatoes are loved by most people because they taste awesome and they are so versatile. But, did you know that this humble fruit is really good for you?

In Chinese medicine, we use tomatoes to aid in digestion and to help detoxify the body. They are also good to combat excess cholesterol, lessen inflammation and curb asthma. Tomatoes can also quench thirst, and they can help fight some kidney infections. These are great reasons why you should be eating more tomatoes.

And can we just talk for a minute about how gorgeous tomatoes are? Multi-colored heirloom tomatoes are like works of art. I like to create no-recipe recipes featuring several varieties of beautiful tomatoes. The next time you need an idea for dinner, cook up some chicken cutlets — you can grill them or bake them. Lay them out on a pretty platter, and then top the chicken with a mound of cut up tomatoes. Use a mix of the purple, red, green, yellow, and orange ones. Add some fresh basil and a drizzle of balsamic vinegar and you’ve got an awesome dinner.

Or, slice up some ripe heirlooms and lay them out on garlic toast — this is a phenomenal appetizer or snack.
