Sweet Potato Apple & Swiss Chard Stew

     Serves: 4-6
  
       - 2 medium sweet potatoes, peeled and cut into 1-inch chunks
  - 1 medium onion, chopped
  - 2 apples, peeled and diced
  - 1 tsp curry powder
  - ½ tsp turmeric powder
  - sea salt and black pepper, to taste
  - 1 large head Swiss chard (I used rainbow chard), sliced into ribbons
  - 2 cans full-fat coconut milk
  - 1 cup raw cashews
  
      - Heat coconut milk and sweet potatoes in a large soup pot over medium heat. Let cook for 5 mins.
  - Add remaining ingredients, except cashews, and cook about 15 minutes, or until the sweet potatoes are cooked through.
  - Ladle into bowls and sprinkle each bowl with a big fistful of cashews.
