  • 2 Tbs coconut oil
  • 1 med onion, chopped
  • 4 garlic cloves, chopped
  • 1 Tbs chopped fresh ginger

  • 1-1/2 tsp turmeric powder
  • ½ tsp cumin
  • 1 tsp tandoori spice
  • ½ tsp cinnamon
  • sea salt and black pepper, to taste

  1. In a large pot set over med heat, melt the coconut oil.
  2. Add the onion, garlic, and ginger and saute until softened, about 3 mins.

  4. Pour in the tomatoes and the broth.
  5. Stir in the coconut milk
  6. Partially cover the pot and let simmer 15 mins.
  7. Stir in the shredded chicken.
  8. Ladle into bowls and top with cilantro leaves and a dollop of yogurt.
  9. Enjoy!
