Fig season is my favorite season. This Fig Almond Smoothie makes great use of all of the fresh figs around right now.

Late summer and early fall are fig seasons here in New York City. The farmer’s markets have tons of little baskets filled with purple and green figs. The scent is so sweet and they are absolutely gorgeous. As soon as I see them, I have to have them. So, I buy them. I buy way too many of them.

I bring home my fig baskets and I put them in the fridge. And then I try to think of new ways to use them, new recipes to make, and new ingredients to pair them with.

And all of this is not only because I love to create foods using the figs, but also because if I leave them in the fridge, I will eat them all as-is. All of them. In a matter of hours. So, not only do I need to be creative, but I need to be creative rather quickly.

This year, I’ve discovered the wonder of using figs in smoothies. I’ve always been one to put dates in my smoothies as a means to sweeten them, but it wasn’t until recently that I tried using figs this way.  Well I can tell you with certainty that they give this smoothie a great sweetness and an incredible texture. And they are so pretty as a garnish too!

It’s so important to eat seasonally. Eating with the seasons means you are getting the highest level of nutrients from your food at the most affordable prices. Fruits and vegetables that are in season are reasonably priced, provide the most nutrition, and are less-likely to be tampered with in terms of additives and preservatives. This is a smoothie that vanilla lovers will go crazy for. For some reason, many of my favorite smoothies are chocolate, but this one is now at the top of my favorites list. I just love the taste of the almonds mixed with the figs. There’s no actual vanilla in it, so maybe it’s one of those illusions — one of those we eat with our eyes things — because this tastes very vanilla to me. Whatever the reason, it is so creamy and so clean tasting and so delicious. And, it’s really good for you!

Fig Almond Smoothie

Here are some of the amazing healing ingredients in this Fig Almond Smoothie:

Oat milk is the base of this smoothie. Oats are good for lethargy and anemia, can soothe digestion, and can help strengthen your bones. Oats are also good for reducing cholesterol, so they are a heart healthy choice. This ancient grain can also help reduce some types of swelling in the body and, a little known tidbit: they can be eaten to help stop lactation.

I use cauliflower for breads, crusts, rice, smoothies… everything. It can be used in so many forms… and, it’s really good for you. In Chinese medicine we use it to aid in digestion and help with constipation. One of the things I find most amazing about this cruciferous vegetable is it’s ability to help with age-related memory loss (My menopausal friends will appreciate this benefit!). It contains a healthy amount of Vitamin B, Vitamin K and Omega-3 fatty acids and can help fight cancer and cardiovascular disease. Cauliflower also helps the body with detoxification and with reducing inflammation. So, as far as I’m concerned, the more the merrier.

Collagen actually heals tissue, it helps to heal your intestinal/gut lining.  Some people who suffer from IBS and other common intestinal issues, have been found to have decreased levels of collagen in their bodies; adding collagen has helped heal these conditions. Collagen strengthens bones and muscles, keeps your joints healthy, improves flexibility and concentration, and helps heal your digestive system. It also keeps you looking youthful.

Figs have the highest amount of calcium of any fruit and are a good source of fiber. They are good for anemia, constipation, indigestion and fever, and they are also good at fighting fatigue and boosting memory retention.

In Asian medicine, we use coconut to strengthen the body, reduce swelling, and stop bleeding. Coconut kills viruses, bacteria, and parasites. It’s good for all types of infections and viruses in the body, including the flu, bronchitis, tapeworms, urinary tract infections, and herpes. And perhaps most importantly, it helps you keep your mind sharp and it makes it easier for you to focus.

Cinnamon is one of the best herbs to warm the body. It’s great if you have a cold. If you are nauseous or have diarrhea, go for the cinnamon. It also gives you energy and helps with menstrual pain. Cinnamon is a Chinese herb: “gui zhi” is the cinnamon twig and “rou gui” is the cinnamon bark. Both are warming and are used for a variety of ailments. In the winter I add cinnamon to all sorts of foods. It helps with the common cold, swelling, various menstrual issues and some aches and pains. Be careful with it if you have a fever because it is so warming.

This Fig Almond Smoothie is a great alternative to all those chocolate and green smoothies we love so much. This smoothie is so creamy and light... you'll love it!
Ingredients
  • 1 cup oat milk (make sure it's gluten-free if you need it to be)
  • ½ cup frozen cauliflower florets
  • 3 ice cubes
  • 1 scoop of collagen
  • 3 figs
  • ½ tsp almond extract
  • small pinch of salt
  • ¼ cup fresh chopped coconut (or can use coconut cream)
  • ¼ tsp cinnamon
Instructions
  1. Combine all ingredients in blender.
  2. Whiz it up until smooth and creamy.
  3. Pour into a pretty glass.
  4. Enjoy!

Creamy Sweet Potato Bowl

This creamy sweet potato bowl is the most comforting bowl of creaminess ever… and it’s great for your digestion!

It’s Monday and it’s the first day of spring! So, happy spring… I know, the weather report says there’s another snow storm coming this week here in New York… but outside today it actually smells a little like the warmer weather might actually be on its way. Yup, even here in the city I can smell it. I can tell. I swear. It’s going to be spring soon. Fingers crossed.

Right before this past weekend, I was trying to step over one of my dogs who was sprawled out on the floor, and I got my toe caught on a chair leg in my living room and now it’s broken. Oh my, have you ever broken a toe? It’s really painful and you really do see stars. And there’s not much you can do to make it heal quickly. You never realize how many things you do during the day until you are restricted because of an injury. What I’m finding is that because I can’t do yoga for a little while or go on long walks in the park with the dogs, I have extra time to myself, and for me that means extra time in the kitchen.

I’m a big believer in not feeling sorry for myself. Especially over something fairly minor like a broken toe.

But, I’m also a big believer in doing whatever I can to make myself feel better. So, I allowed myself a few minutes of cursing and despair, and then I thought about what this injury would give me the excuse to do that I don’t usually get a chance to do. You know, like binge watching something mindless or reading more books than usual…. or cooking even more.

And, one of the things that always makes me smile is reading all of my favorite food blogs. When I saw Caitlin’s awesome recipe for a sweet potato breakfast bowl on From My Bowl, I just knew I had to made a version of it.

Okay, so here’s where I connect the dots of my ramblings… creamy, comforting, warming bowls of food always make me feel better. That’s how this creamy sweet potato bowl came to be. This bowl actually made me so happy that I made it three days in a row. And, if I hadn’t run out of some of the ingredients, I could have continued to make it for a few more days.

One of the awesome things about this recipe is that you can customize it any way you like. And it’s really easy. All you do is roast the sweet potatoes and combine the flesh with a few ingredients. After you scoop the creamy mixture into your favorite bowl, you can top it with whatever makes you happy. I was so in love with the bowl I made the first day, I made it exactly the same way each day I ate it… and I rarely eat the same exact thing twice. And, they are gluten-free. Almonds will help relieve a cough and asthma and are also good for constipation. This recipe uses almond milk and can also include almond butter.

Sunflower seeds help lower blood pressure and can relieve headaches and dizziness. In Eastern medicine we recommend eating sunflower seeds if a person is troubled by certain severe intestinal symptoms like dysentery, or intestinal worms or certain parasites. These seeds also contain calcium and magnesium and have anti-aging properties. In Chinese medicine they are often prescribed to get rid of rashes. I like to use sunflower seed butter in this recipe.

This is so creamy and comforting and it can be customized any way you like. Make one of these bowls for breakfast, lunch, or dinner... it will put a smile on your face and heal you at the same time.
Ingredients
  • 1 large sweet potato
  • ½ cup almond milk
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • 1 Tbs sunbutter (sunflower seed butter) or almond butter (Here's the sunbutter I like)
  • sea salt, to taste
  • toppings: pomegranate seeds, pumpkin seeds (Here's some sprouted ones), cashew yogurt (or another non-dairy yogurt)
Instructions
  1. Preheat your oven to 400°F.
  2. Poke a bunch of holes in your sweet potato with a fork.
  3. Place the sweet potato on a piece of foil or a small baking sheet and roast in the oven until cooked through -- about an hour.
  4. Remove the potato from the oven and slice it in half.
  5. Scoop the flesh into the bowl of an electric mixer. Add the almond milk, nut butter, cinnamon, and sea salt. Mix until completely creamy. (You can also use a hand mixer or a blender for this.)
  6. Scrape the creamy mixture into 2 bowls.
  7. Top with pomegranate seeds, pumpkin seeds, and a big dollop of yogurt.
  8. Enjoy!

Do you have any descriptive food words that make your mouth water? For me, if I see the words “birthday cake” or “cake batter” I have kind of a drooling, mouth watering response. I don’t know what it is about those words, but for me, when I see them, I have to have whatever it is immediately. So, when I started seeing recipes for chia puddings that were described this way, I was all in. I have to give a big thank you to Macy at Paleo Crumbs because her awesome recipe was the one that made me run to the store to buy the ingredients and make this birthday cake chia pudding.

I don’t know what mornings are like in your house, but here in my house we are kind of laid back. It wasn’t always that way. We used to run around, grab whatever we could to eat, shower, dress, and leave as quickly as possible to begin our day. It was that way for many years. Then we moved to the city. And this part of our lives magically slowed down. Now, we are able to get up, go to the park with the dogs, have an actual real conversation, and spend time together before anyone has to leave. So, oftentimes I will cook a big breakfast for us. This birthday cake chia pudding, is so good, that it can even compete with a great avocado toast or delicious eggy type breakfast, but there’s absolutely no cooking involved. The only labor here comes when you have to shake the jar!

I’ve always been a fan of chia pudding. I like that rice pudding-like texture. I love that I can customize it with whatever flavor I’m feeling at that particular moment. I also love that it is so easy to make and that it can be made way in advance. Yes, chia pudding is an awesome invention.

Now, if I’m being totally honest, I’ll tell you that I love chia pudding, but my family is not quite as enamored with these yummy jars as I am. BUT, this birthday cake chia pudding has changed all that. As soon as I stuck a spoonful in Steve’s mouth, he was a convert. It’s really that good. And, it really is reminiscent of vanilla birthday cake. Especially if you top it with sprinkles…

Chia seeds are ancient seeds that got their name from the Mayan word for “strength”. These tiny seeds have the unique ability to turn liquid into a gel-like substance when making puddings and they are great added to smoothies and shakes. They are rich in omega-3 fatty acids,and fiber. And, because they are so high in antioxidants, they help keep your skin looking younger. They help optimize both your digestive system and your cardiovascular system.

In Asian medicine, we use coconut to strengthen the body, reduce swelling, and stop bleeding. Coconut kills viruses, bacteria, and parasites. It’s good for all types of infections and viruses in the body, including the flu, bronchitis, tapeworms, urinary tract infections, and herpes. And perhaps most importantly, it helps you keep your mind sharp and it makes it easier for you to focus. I like to use full-fat canned coconut milk for this chia pudding.

Pure maple syrup contains antioxidants that help reduce inflammation in the body (think inflammatory bowel syndrome or heart disease). It also contains zinc, calcium, and magnesium. It’s much lower on the glycemic scale than traditional sugar. Whenever possible, use a darker (grade B) syrup because the nutritional composition is better than that of lighter syrups.

Maca Root is one of the superfoods I take every day. It has many healthy benefits including increasing libido, helping menopausal symptoms, relieving menstrual cramps, regulating hormones, and increasing energy.

Baobab is a superfood that is a powder made from an African fruit. This amazing superfood has tons of vitamin C to boost your immune system and it’s great for energy. Sometimes I put some in my water bottle to keep my hydrated throughout the day. It’s easy to put a scoop in anything for a pick-me-up.

Peanut Butter Banana Oatmeal

Last week here in New York we were freezing our tootsies off. It was so cold outside! And, unfortunately, it was really cold inside our apartment as well. If you’ve ever lived in an old pre-war apartment, you know the “Three Little Bears” type of frustration with the heat.  It’s often too hot or too cold. I have to say, too cold is most often easier to deal with than too hot… but last week we had to break out every blanket we had to stay warm. So, I did something to make me feel nice and toasty — from the inside-out — I made a big batch of peanut butter banana oatmeal. You just can’t hate the cold while you are eating this…

You can make this oatmeal with quinoa or with a grain-free blend if you prefer. On this cold, snowy, day, I went for the real thing and it was soooooooo good. Oftentimes, if I’m making a flavored type of oatmeal, I will make it the night before in my slow cooker. Honestly, I haven’t cooked a pot of oatmeal on the stove in a really long time, but this was so easy and so delicious, I won’t wait very long to make it again.

I used what I had in my fridge and pantry, but this is so easily customizable that I want you to just have fun with it. Go into your fridge and your pantry and remove everything that might taste good on a hot bowl of oats. Go ahead… I’m waiting…
Now, pick several of these things that you think will compliment each other. Now, grab some honey or maple syrup. Now, you are ready to cook your oats.

I don’t often let myself eat them because they sometimes contain mold and it’s really hard to find reasonably priced organic healthy peanuts. But, these popular nuts are great for lessening edema; they act like a diuretic. They can also help you if you have insomnia or if you are breast feeding. An old-time remedy is to made peanut tea and drink it for bed to promote sleep. And, peanut shells used to be used to help with high blood pressure. Try to buy organic peanut butter if you can — sometimes the ground these nuts grow in isn’t filled with the stuff you’d want to ingest.

Honey is a Chinese herb (Feng Mi). It’s used to boost energy, quiet coughs, and lessen constipation. It can even help with ulcers.

  • ½ cup steel cut oats
  • 2 cups water
  • One banana, sliced
  • 1 tsp butter

Instructions
  1. Cook the steel cut oats in the water until they are done (follow the package directions); mine took 30 minutes.
  2. Heat the butter on low heat in a small saute pan.
  3. Add the sliced banana, and stir until the banana starts to melt.
  4. Scoop the oatmeal into 2 bowls.
  5. Top with the melted bananas, melted peanut butter, honey or syrup, and the walnuts.

The other day I was on a hunt for grain-free, unsweetened desserts. I know, sounds pretty unappetizing. That’s why I needed to hunt. When I came across this recipe for grain free banana bread, my expectations were fairly low. But, I must give kudos to Michele at Paleo Running Mamma because that’s where I found the original recipe, and it’s genius.

I’ve made grain free cakes and breads before and more often than not, they don’t rise enough or they are really dense. But not this recipe. This grain free banana bread is delicious. And it rose. And it turned golden on the outside. And it tastes unbelievable — it’s sweet with no added sweeteners.

This month, I’ve been on an elimination diet. I’ve been indulging a tad too much since I moved into Manhattan. I mean, it’s just so easy to eat and drink way too much here. I really deluded myself into thinking that because there are so many healthy places to eat here that I would be in tip top shape. Haha — turns out even though I eat really healthy, I eat way too much. And don’t even get me started on happy hours and brunches…

This grain-free banana bread is sitting in my kitchen now and it’s making me smile because I know I can grab a slice of it later and have it with a great cuppa something. Yum.

I am a big proponent of eating the whole egg. So many of the nutrients and the taste are in the yolk; I’ll never understand separating nature’s perfect food. In eastern medicine, nuts are known to be good for your brain, heart, skin and reproductive system. Almonds are particularly nutritious. They are a good source of protein and they give you energy. And, they are gluten-free. Almonds will help relieve a cough and asthma and are also good for constipation. This recipe uses almond flour.

They contain disease-fighting phytonutrients that are good for your blood, immune system, tissues and skin. Hemp contains a specific fatty acid that acts as a powerful anti-inflammatory. Ingredients
  • 4 very ripe bananas, mashed
  • 4 eggs
  • 2 tsp vanilla extract
  • ¼ cup coconut oil
  • 1-3/4 cups almond flour
  • ½ cup tapioca flour
  • ¼ cuphemp seeds
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp sea salt
Instructions
  1. Preheat the oven to 350°F.
  2. Line a loaf pan with parchment paper.
  3. In a large bowl, whisk together the mashed bananas and the eggs.
  4. Stir in the vanilla and the coconut oil.
  5. In a smaller bowl, whisk together the rest of the ingredients.
  6. Add the dry ingredients to the mashed banana and egg mixture.
  7. Stir to combine.
  8. Pour the batter into the lined loaf pan.
  9. Bake until a knife inserted into the center comes out clean. (Mine took 65 minutes, but be sure to check yours at 45 minutes... all ovens are different.)
  10. Let cool completely in the pan on a wire rack.
  11. Slice.

Breakfast is my favorite meal of the day. I absolutely love to go out for breakfast. I also love to cook breakfast. I love breakfast for dinner… and lunch. But, I’m human, and sometimes there’s just not enough time in the morning to have an elaborate breakfast. OK, most days there’s not enough time. Except Sundays. Sundays are made for HUGE breakfasts. Anyway, this turmeric chia pudding is the perfect solution to those I-have-no-time-for-a-good-breakfast days.

Chia seeds are like magic beans. You take the sand-like substance out of the bag, add liquid, and you get a velvety, rice-pudding-like creamy pudding. Magic.

I have made chia pudding in every flavor imaginable. And, I’ve also experimented with some flavors that most sane people wouldn’t want to imagine… This turmeric chia pudding was a great experiment! It has a slight Chai flavor. And the goji berries in it give it great extra flavor and texture.

Have you made chia pudding before?

It’s the easiest! Put the ingredients in a jar, shake it up, put the jar in the fridge overnight. Eat it in the morning. Done. Cue smile on face. And, it’s sooooooo good for you!

If you don’t like the texture of rice pudding, or tapioca, feel free to put it in the blender in the morning to get a smoother pudding. But, I like mine with all the chia texture.

Goji berries are also a Chinese herb (Gou Qi Zi). They are great for your blood. I prescribe them to some people with chronic pain in the legs and lower back. They are also good for men experiencing impotence and can be used to treat some eye problems. Women who are pregnant and people with intestinal issues should be careful not to eat too many gojis, but the amount in this bark should be fine for anyone.

Strawberry Cauliflower Smoothie

Cauliflower in a smoothie? Yes! You can stop rolling your eyes and scrunching up your nose. This is delicious. And creamy. And healthy. And easy. It’s true, and this strawberry cauliflower smoothie is now my new favorite. But, don’t just take my word for it — after I posted a video for this smoothie on Facebook, many people felt the same need I did (to make it NOW) and the result was unanimous — it’s awesome!

The idea for this recipe came from Laney at Life Is But A Dish. As soon as I saw her post, I knew I had to try cauliflower in a smoothie. I mean I had to… I went immediately to the store and bought a bag of frozen cauliflower. I don’t think I’ve ever bought frozen cauliflower. But I bought a big bag and it’s amazing in this strawberry cauliflower smoothie.

What does it taste like? I know you are wondering… it tastes like strawberry ice cream. Yup. It does. Okay — slight disclaimer — I haven’t had real ice cream in probably about 15 years… but to me it tastes like that.

I used some of my favorite superfoods and healing ingredients in this recipe, so feel free to customize yours however you like.

Here’s what makes this strawberry cauliflower smoothie so healing:

Strawberries help get rid of excess alcohol in your body and they are good for your heart. The first time I made this pineapple protein smoothie bowl it was a bright summer day.  Ah, I remember it well — shining sun, warm breeze, still daylight when it was time for dinner…  Today, it’s much different.  It’s cold and dreary. And raining. And it’s dark at 4:30. And everyone around me has a cold and a sore throat. I mean, there are tissues everywhere… yuk.

So, I did what I love to do — try to make everything and everyone better with food. That means making dishes with turmeric and ginger and some of my awesome Chinese and Ayurvedic supplements.  But honestly, I was starting to have a hard time making the sickies eat so much soup.  I figured if I went in the opposite direction, maybe it would work.  I took my original recipe for this smoothie bowl and I added some magic.

And, by magic I mean ginger and camu camu powder. These are ingredients that I love to put in my shakes and they worked healing wonders in this beautiful smoothie bowl. The products I used were new ones (and because I like full-disclosure, I will tell you that I received these 2 ingredients free in exchange for my opinion on them) and I loved them.  Anthony’s Goods thought I might like some of their organic products. I just love food that lets you be creative. Okay, if I’m being completely honest, I think you can be creative with any food. Yes, any food! I had a cooking instructor who used to say: “It’s not rocket science; it’s only food,” and I agree completely. I mean, what’s the worst that happens — something isn’t completely delicious? Well, anyway, the point I was trying to make is that one of the great things about smoothie bowls is that they beg for creativity. So, you should make them exactly as you like them.

There’s something about the taste of a fresh pineapple that just screams summer. I’ve been on a real fruit kick lately, so instead of my usual chocolate-based smoothies in the morning, I’ve been gravitating towards fruit-based concoctions. So, this smoothie bowl is made with lots of fresh pineapple and is topped with lots of luscious fruit and berries… Sometimes when I make it it’s a little thicker than others, so if your seems thin for a bowl, then just pop it in the freezer while you get your toppings together (or, you always have the option of putting it in a glass).

When I make my chocolate smoothies for breakfast, I generally put a bunch of protein in it to keep me full until lunch. For some reason, when I use fruit, I don’t think along the same lines. So, with this smoothie bowl, I made a conscious effort to create something that was more filling than a bowl of fruit, and it worked out deliciously. I made extra for my daughter, who decided she wasn’t in a smoothie-kind-of-mood and wanted eggs instead, but I stored the extra in the fridge and happily ate it the next morning.

This amazing pineapple protein smoothie bowl is so easily customizable to your personal taste. The second day I had it, I topped it with handfuls of pecans and toasted coconut… this was awesome!

Pineapple is great for your digestion and it can help stop diarrhea. It’s especially good in the summer because it fights against heatstroke.

Ginger is  a chinese herb (Gan Jiang) that warms the body. It’s especially good during cold weather and also during seasonal changes. So, when it’s winter or when winter is trying to turn into spring, and we (those of us on the east coast) get some of these cold, raw, damp days, ginger will make you feel better and will help boost your immune system. Old folklore shows that ginger was rubbed on scalps to stop baldness. And, in some circles, a ginger paste is still rubbed on arthritic joints to stop pain (don’t try this at home unless you are diagnosed with a cold-condition by an acupuncturist).

Camu Camu is a plant-based powder that has the ability to boost your immune system and balance your mood. It has a large amount of vitamin C, can reduce inflammation, and can help improve mental clarity.

I love to add bananas to smoothie bowls; they offer a great natural sweetness and a nice creamy texture. Bananas are good for your intestines (an old Asian remedy was to eat a banana every day to relieve hemorrhoids) and your lungs, and they even help relieve the effects of overindulging in alcohol.

Turmeric is actually a Chinese herb (Jiang Huang). It is great for reducing inflammation throughout the body. If you suffer from aches and pains in your joints, try turmeric. It can help relieve menstrual pain and some other abdominal pains but, if you are pregnant, ask your doctor before you eat too much turmeric.

Research shows that pumpkin seeds may reduce blood sugar and increase bone density. And, because they are rich in iron, they are good if you are tired or have anemia. In Asian medicine, pumpkin seeds are sometimes used to get rid of intestinal parasites and to decrease inflammation in the body. I buy pumpkin seed protein in powder form because it’s a great easy way to add protein to my shakes and smoothies without adding any extra sugar. (See the recipe below for where to buy it.)

Peaches moisten the body; they can alleviate a dry cough, help with dry mouth, and can be good if you are experiencing constipation. There is a Chinese herb that is made from the peach kernel (Tao Ren). This herb is great for constipation and some menstrual problems. Isn’t it great when something so delicious is also so healthy?

Bee pollen is considered one of the most nutritious substances you can put in your body. It is higher in protein than anything animal-based and it contains an amazing amount of amino acids. It’s good for your energy, your skin, your breathing and your allergies. Add a spoonful to whatever you can. I know there are differing opinions as to whether bee pollen is vegan; so if you would prefer to leave it out, that’s just fine.

Raspberries are an anti-aging fruit. They are great for men who are experiencing frequent urination and for men and women with vision issues. They have anti-cancer and anti-inflammation properties. In Chinese medicine, raspberries are an herb called Fu Pen Zi. This Chinese herb is prescribed for impotence, premature ejaculation, poor vision, and frequent urination. Raspberries are great for you, but if you are experiencing difficulty urinating, that’s when this berry should be avoided.

All berries are good for you and contain antioxidants. As a general rule, the darker the color, the more antioxidants, making blackberries even better than other berries at fighting cancer and other illnesses. Blackberries also can help relieve intestinal inflammation and diarrhea, and they are good for your skin. And, even more importantly, they taste great…

A creamy pineapple and banana base is the perfect vehicle for so many healthy and fresh and delicious toppings... best breakfast ever!
Ingredients
  • 1 whole pineapple, cut into chunks
  • 2 frozen bananas (I peel bananas when they turn brown and then store them in the freezer)
  • ½ tsp turmeric (Here's a good one)
  • 2 Tbs pumpkin seed protein powder (I like this one)
  • 1-1/2 tsp camu camu powder (I got mine here)
  • 1 tsp organic ground ginger (I got mine here)
  • Optional toppings:
  • sliced fresh peaches
  • bee pollen granules (I have this one)
  • fresh raspberries
  • fresh black berries
  • organic toasted coconut flakes (I bought some sweetened with coconut sugar)
Instructions
  1. Put the pineapple, frozen bananas, turmeric, and protein powder into your blender. (I used my Vitamix so it was pretty quick...). Blend until smooth.
  2. If you want your smoothie bowl thicker, pour this mixture into bowls and pop them in the freezer while you are readying your topping.
  3. Top with whatever toppings you like.
  4. Enjoy!

Paleo Pumpkin Pancakes

Did you know that buckwheat is a seed and not a grain? There’s a debate as to whether or not it’s 100% paleo, but I think it is! And it can be a great fix for spontaneous sweating and high blood pressure… if you are looking for something that tastes and feels like a grain, you’ve got to try this!

It’s pumpkin season! And it’s pancake season! Okay, so maybe there’s not really a pancake season, but there should be…

These Paleo Pumpkin Pancakes are so perfect, you shouldn’t need a reason to make them, but they taste so decadent, that you might feel like you are cheating on your healthy eating lifestyle. But you are not. Really. These are so good for you!

Breakfast is my favorite meal.  Always has been.  I’m like a breakfast freak. Steve gets on my case all of the time because the second I wake up I start planning my day around breakfast.  During the week this is easy because I usually have some type of shake. But on the weekends, it’s a different story.  I love to go out to breakfast. But, sometimes, like when I want pancakes, I’ll make them myself, because even here in Manhattan, it’s not so easy to find paleo pancakes when I want them.

So, when I woke up last Sunday, I popped out of bed (I’m an annoying morning person), and immediately started talking about breakfast. Steve looked at me, shook his head, and just kind of slid out of the room and put the dogs’ leashes on.  I knew there was no way he was entertaining my hugs restaurant brunch ideas… so as we walked the dogs, I formulated my homemade breakfast in my head.  And these Paleo Pumpkin Pancakes happened.  I can’t take the credit for the original recipe, because I got most of it from Erin at her awesome blog: Well Plated.

I’ve made lots of paleo pancakes before. But never with buckwheat. I don’t know why, except that I guess I never really thought or believed that buckwheat is paleo friendly. So I did some research. Buckwheat is a seed; it’s not a grain. And when it’s ground into a flour, it makes the most awesome pancakes. I’ve actually been experimenting with making risotto out of whole buckwheat groats lately and so far I’m loving the results (I’ll post a recipe soon).

These Paleo Pumpkin Pancakes are crisp on the outside and hot and smooth on the inside. Add some pure maple syrup and you feel like you are cheating on your diet. I mean, pumpkin and maple… this is a delicious flavor combo…

Here are some of the reasons these pancakes are so healing:

Buckwheat is great to eat if you have diarrhea. It also helps lower blood pressure, stops some types of sweating, and has a good amount of vitamin E. It also contains antioxidants that can help fight cancer and heart disease.

Pumpkin can help reduce pain and fever and can soothe stomach irritations. It’s a great food to treat constipation, allergies and asthma. It’s high in vitamin A and can help protect your lungs and intestines from cancer.

In Asian medicine, we use coconut to strengthen the body, reduce swelling, and stop bleeding. Coconut kills viruses, bacteria, and parasites. It’s good for all types of infections and viruses in the body, including the flu, bronchitis, tapeworms, urinary tract infections, and herpes. And perhaps most importantly, it helps you keep your mind sharp and it makes it easier for you to focus. I like to use full-fat canned coconut milk for these pancakes.

I am a big proponent of eating the whole egg. So many of the nutrients and the taste are in the yolk; I’ll never understand separating nature’s perfect food. Eggs help with many types of dryness in the body. If you have a dry cough or a frog-in-your-throat, try eating some eggs. They have also been shown to help women with various conditions during and after pregnancy. Some people consider eggs to be a superfood. They contain a large amount of vitamins A and B and are a great source of protein. Eggs sometimes get a bad rap because of cholesterol, but it’s been shown that in 70% of people, eggs do not raise cholesterol, so don’t assume they are bad for you. Buy organic eggs and you are really doing the right thing.

These buckwheat pumpkin pancakes are paleo friendly; did you know that buckwheat is a seed and not a grain? These are so good and they are made in the blender!
Ingredients
  • 1 cup buckwheat flour (you can buy it here)
  • 1 cup canned pumpkin puree (I buy them buy the case here)
  • 1 cup full-fat coconut milk
  • 2 eggs
  • 2 Tbs walnut oil (substitute whatever oil you like) (you can buy walnut oil here)
  • 2 Tbs pure maple syrup, plus more for serving
  • 2 tsp vanilla extract
  • ½ tsp raw apple cider vinegar (buy this one)
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1 tsp pumpkin pie spice
  • 2 tsp coconut oil for greasing the pan (plus more if needed)
Instructions
  1. Mix all ingredients, except coconut oil in a blender. (I used my Vitamix, so it was quick)
  2. Blend until completely smooth.
  3. Heat oil in non-stick pan until hot.
  4. Pour in batter to form small pancakes (the small ones cooked better than the bigger ones).
  5. Cook on first side until completely done (wait until the edges start to brown and lots of bubbles appear on the top), then flip them.
  6. Cook shortly on the second side, until slightly crisp.
  7. Remove to plates and serve with maple syrup.
  8. Enjoy!
