This is the perfect dish for all of those ripe summer tomatoes! You can customize it with whatever fresh veggies are in your fridge...
Ingredients
16 oz heirloom tomatoes, cut into bite-size pieces
3 Tbs extra virgin olive oil
2 tsp za'atar (or use spice blend of your choice)
6 Tbs pomegranate seeds
¼ cup very thinly sliced red onions
3 large basil leaves, sliced into thin ribbons
cubes of vegan cheese (or cheese of your choice)
juice of ½ a lemon
sea salt, to taste
Instructions
Combine the oil and the za'atar in a small bowl.
Combine remaining ingredients in a large bowl.
Toss with the oil mixture.
