Toss the drained potatoes in a large bowl with the rest of the ingredients.
Spread the potatoes in a single layer on a parchment-lined baking sheet. Try to spread out the potatoes so that they are not touching each other.
Roast for about 45 minutes, or until the potatoes are golden and crispy.

Note: I've seen lots of versions of this recipe and oftentimes the baking time is much less than 45 minutes, so check your potatoes frequently. Mine were perfect at 45 minutes.
